Kosher salt
2 pounds cleaned, poached, halved, and cracked Dungeness crab
2 tablespoons grapeseed oil
6 cloves garlic, minced
1 tablespoon grated fresh ginger
1 pound fresh egg linguine
1/4 cup soy sauce
2 tablespoons sambal
1 tablespoon fermented black bean sauce
3 tablespoons chopped parsley
2 tablespoons honey
2 tablespoons unsalted butter

Steps:

  • Bring a large of salted water to a boil over high heat. Put a large skillet or wok over high heat and add the oil, garlic and ginger and cook, stirring constantly, until fragrant, about 30 seconds.
  • Meanwhile, add the linguine to the boiling water. Add the crab to the hot wok and toss to coat in the garlic and ginger. Once the crab starts to turn color, add the soy sauce, sambal, black bean sauce and a ladle of pasta cooking water. Bring to a simmer and cook until it reduces and thickens slightly, 5 to 7 minutes.
  • Drain the linguine, reserving about 1 cup of the cooking water, and add the pasta to the crab along with the parsley, honey and butter and toss to combine. Cook until thickened again, about 2 minutes. If the mixture seems dry, add more pasta water until it's saucy. Serve hot.

4 dungeness crabs, cleaned, cooked & cracked
1/3 cup butter
1/3 cup olive oil
3 tablespoons minced garlic
salt & pepper
3 tablespoons fresh lemon juice
1/4 cup chopped fresh parsley

Steps:

  • Preheat the oven to 500°F.
  • Heat butter, oil, and garlic is a large saucepan over medium-high heat. Add crabs, 2 at a time, toss well, season with salt & pepper.
  • Transfer to a large baking pan. Roast about 12 minutes, tossing well halfway through. Warm butter mixture, add lemon juice and parsley.
  • Arrange crabs in a large shallow bowl & drizzle butter mixture over. Serve immediately with chunks of hot bread and a nice white wine.

For the sauce
1/3 cup soy sauce
2 teaspoons fish sauce (see note)
2 teaspoons sriracha (see note)
2 tablespoons michiu (rice cooking wine, see note)
3 tablespoons kecap manis (Indonesian sweet soy sauce, see Note)
2 tablespoons mirin (see note)
For the noodles
1 pound fresh egg noodles, chow mein thickness
3 ounces unsalted butter
4 tablespoons minced garlic
1/2 pound meat from a 1 1/2- to 2-pound Dungeness crab
Reserved crab "butter" (optional, see Note)
1 tablespoon fresh lemon juice
Chopped cilantro, for garnish

Steps:

  • Combine the sauce ingredients and set aside. Boil 3 quarts of water, and cook egg noodles to al dente, about 6-8 minutes. Drain in a colander, rinse in cold water and set aside. Combine butter and garlic in a saute pan over medium-high heat. Once butter begins to brown and garlic gets fragrant (about 1 minute), add the egg noodles and stir until butter coats them evenly. Turn heat to high. Continue to saute for 3 minutes, adding the sauce mixture and combining evenly with the noodles. Once noodles have been cooked through (2 minutes), add the crabmeat and "butter" (tomalley), if using, and cook for an additional 1 minute. Stir in lemon juice. Serve noodles on a plate, top with cilantro.
