1 pound cooked chicken (from rotisserie chicken, leftover roast chicken, or from the deli section of the supermarket), cubed
1 cup diced fresh tomatoes
1/2 cup diced celery
1/4 cup diced red onion
1/2 cup Thai Peanut Sauce, recipe follows
1/4 cup light mayonnaise
2 tablespoons fresh lime juice
Salt and freshly ground black pepper
6 cups shredded lettuce

2 teaspoons toasted sesame oil
1 teaspoon hot sauce

SANTA FE CHICKEN SALAD (APPLEBEE'S)

Santa Fe Chicken Salad (Applebee's) image

Do not let the list of ingredients keep you from making this salad. Most of the ingredients are for the marinade and salsa which should be made the day before and refrigerated. The remaining ingredients are the salad and side items. It is super quick to throw together the next day and tastes awesome. The tequila-lime chicken is outstanding on its own and you may want to make extra Pico de Gallo to keep in the fridge. I have adapted this recipe from a former Applebee's employee. The recipe is scaled down for one serving, so adjust for more servings. Cooktime is marinade time.

Yield 1 serving(s)

Number Of Ingredients 26

2 tablespoons gold tequila
1/4 cup freshly squeezed lime juice
2 tablespoons freshly squeezed orange juice
1 teaspoon fajita seasoning mix
3/4 teaspoon minced fresh jalapeno pepper (seeded)
3/4 teaspoon minced fresh garlic
1/4 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1 boneless chicken breasts, skin on or 1 boneless skinless chicken breast
1 small tomatoes, diced
1/2 small onion, diced
1 -2 teaspoon diced jalapeno (we like more!)
1/8 cup fresh cilantro (diced)
1/2 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon garlic powder
1 teaspoon olive oil
1 teaspoon white vinegar
3 tablespoons ranch dressing (they use Naturally Fresh brand lo-fat)
tortilla chips (multi-colored or regular) or corn tortilla strips (multi-colored or regular)
chopped scallion, sprinkled on top
1 ounce sour cream (ramekin at 9 o'clock)
1 ounce guacamole (ramekin at 3 o'clock)
2 ounces pico de gallo, recipe above (ramekin at 12 o'clock)
3 -4 cups torn salad greens
1/8-1/4 cup shredded monterey jack cheese or 1/8-1/4 cup shredded cheddar cheese

Steps:

  • Combine marinade ingredients in a container with lid. Add Chicken and place in refrigerator overnight.
  • Combine Pico de Gallo ingredients in a small bowl with lid and place in refrigerator overnight with chicken.
  • Remove chicken from marinade and sprinkle with fajita seasoning. Grill skin-side down for about 5 minutes, turn and continue to grill for about 10 minutes or until chicken is cooked through. I use my George Forman grill with fantastic results (about 7 minutes).
  • While the chicken is grilling combine ranch dressing with 2 Tablespoons of the Pico de Gallo. Set Aside.
  • Prepare Garnishes.
  • Toss salad greens with cheese and remaining Pico de Gallo (or less - to taste). Sprinkle with fried tortilla strips or lightly crushed tortilla chips.
  • Cut chicken into strips and place on top of greens. Add Garnishes to plate.

PEANUT LIME VINAIGRETTE:
1/4 cup each: fresh peanuts, vegetable or peanut oil and fresh lime juice (2 limes)
1/2 Tbl peanut butter
1 tsp each sugar and soy sauce
1 small clove garlic, pressed or finely chopped
2 Tbl lime zest (2 limes)
SALAD:
1 cup fresh dates, chopped into 1/4" pieces
2 small corn tortillas*
vegetable oil for deep frying
7-8 cups each mixed greens and chopped Romaine lettuce
1 cob corn (or 3/4 cup corn kernels)
vegetable oil
14 oz can (398 ml) black beans, well rinsed and well drained
1 avocado
3/4 cup feta cheese
1/4 cup chopped roasted peanuts

Steps:

  • CAJUN CHICKEN: Rub chicken breasts all over with vegetable oil; sprinkle chili powder liberally on both sides. Grill over medium-high heat or broil until done. Set aside. Slice diagonally into 1/4" wide slices. PEANUT LIME VINAIGRETTE: Process ingredients in a small food processor until almost smooth. There should be tiny chunks of peanut and lime. SALAD: Up to one day ahead: prepare deep fried tortilla pieces: slice tortillas into pieces 1/8" wide and 1" long. Heat oil in a small pot or skillet to 375 degrees. Drop tortilla pieces in batches; drain on paper towel; sprinkle on salt (may be kept loosely covered at room temperature for 1 day)(coarsely crushed tortilla chips or purchased deep fried chow mein noodles may be substituted) grill corn: rub corn with vegetable oil; place over medium-high grill. Cook, rotating until lightly brown tinged. Remove kernels. (May be chilled until using.) To assemble salad, place lettuces in a large bowl. Toss with enough dressing to lightly coat. Add corn, dates and black beans and half the feta cheese and tortilla piece into lettuces; gently toss. Divide lettuce mixture between 4 dinner plates. Thinly slice avocado and divide between 4 plates, placing on the side. Top each salad with crumbled feta cheese, tortilla pieces, chicken pieces and chopped peanuts, if desired.

Tips:

  • To save time, use a rotisserie chicken or leftover grilled or roasted chicken.
  • If you don't have roasted corn, you can use canned or frozen corn. Just be sure to drain and rinse it before using.
  • For a spicier salad, add a teaspoon or two of chili powder or cayenne pepper to the dressing.
  • If you don't have fresh cilantro, you can use dried cilantro. Just use about 1/4 of the amount called for in the recipe.
  • Serve the salad on a bed of lettuce or spinach for a more complete meal.

This Santa Fe chicken salad is a delicious and easy-to-make dish that is perfect for a quick and healthy lunch or dinner.
