1/4 teaspoon water
2 -4 drops green food coloring
1/2 cup flaked coconut
3 tablespoons butter or 3 tablespoons margarine
4 cups miniature marshmallows
6 cups Rice Krispies
miniature marshmallow
jelly beans
chocolate egg

Steps:

  • In small bowl stir together water and green food coloring. Add coconut. Stir until coconut is tinted. Spread on baking sheet to dry.
  • In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
  • Add cereal. Stir until well coated.
  • Divide warm mixture into sixteen 2 1/2-inch muffin-pan cups coated with cooking spray. Shape mixture into individual cups. Cool. Remove from pans.
  • Fill cooled nests with coconut, marshmallows, jelly beans or chocolate eggs. Best if served the same day.
  • MICROWAVE DIRECTIONS: Follow step 1 above. In microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Follow steps 3 thru 5 above. Microwave cooking times may vary.
  • Note: For best results, use fresh marshmallows. Store no more than two days at room temperature in airtight container. To freeze unfilled cups, place in single layer on wax paper in airtight container. Freeze for up to 6 weeks. Let stand at room temperature for 15 minutes before filling.

I make these little treats for my son to take to school. It's a perfect, cute little Easter treat. I serve them in the individual over-sized cupcake papers. You could use plain Rice Krispies and/or omit the chick.....still just as cute. Prep time does not include cooling and setting time.

5 tablespoons margarine
6 1/2 cups mini marshmallows (about 1 1/2 10.5 oz bags)
9 cups COCOA KRISPIES® cereal
90 unwrapped pastel candy-coated chocolate egg-shaped decorative candies (I usually use a combo of Reeses Pieces Pastel Eggs, Hershey's Pastel Eggs, Cadbury and or jelly bean) or 90 jelly beans (I usually use a combo of Reeses Pieces Pastel Eggs, Hershey's Pastel Eggs, Cadbury and or jelly bean)
2 (4 1/2 ounce) packages marshmallows, peeps chicks (I use yellow)

Steps:

  • Lightly spray 2 cupcake/muffin tins w/ nonstick cooking spray.
  • In a large saucepan, over low heat, melt margarine. Add marshmallows, and stir frequently over the low heat until melted and mixed well with melted margarine. Remove from heat.
  • Stir in Rice Krispies and mix to coat well.
  • Immediately spoon into muffin/cupcake tins to almost full, but not packed down.
  • With greased or wax-paper-covered thumb, OR greased shot glass, press down on center of the Krispies treats to form nest shape. Allow to cool and set completely---about 20 minutes.
  • Remove to extra-large foil muffin/cupcake liners.
  • Place 2 or 3 egg-shaped candies in each nest.
  • Separate the marshmallow Peep chicks and gently press a chick on top of each nest.

Tips:

  • Use good quality chocolate for the best flavor. A chocolate with a cocoa content of at least 70% is ideal.
  • Make sure the chocolate is melted slowly and evenly. This will help to prevent it from seizing.
