½ pound boneless salmon fillet
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1 tablespoon lemon pepper seasoning
1 teaspoon lemon juice
¼ teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lay salmon fillet skin-side down on a wide piece of aluminum foil.
  • Drizzle olive oil and balsamic vinegar over salmon. Sprinkle lemon pepper, lemon juice, and salt on top. Fold foil up and over the fillet, tenting it at the top. Roll top down to seal salmon in foil. Transfer to a baking sheet.
  • Bake in the preheated oven until salmon flakes easily with a fork, about 15 minutes.

2 salmon steaks (about 1-inch thick)
1/3 cup lemon juice (fresh or bottled)
1/4 cup melted butter (no subs!)
1 teaspoon Worcestershire sauce
2 teaspoons seasoning salt (can use more to taste)
black pepper

Steps:

  • Rinse the salmon steaks and pat dry.
  • In a small bowl whisk together the lemon juice, melted butter, Worcestershire sauce, seasoned salt and black pepper to taste; pour into a shallow glass 8-inch baking dish.
  • Add in salmon steaks; turn to coat.
  • Cover and chill for 30 minutes.
  • Heat oven to 400 degrees F.
  • Bake for 10 minutes; remove from oven and spoon the sauce over the steaks.
  • Return to oven and continue to bake for another 10 minutes longer or until the fish flakes and is opaque.
  • Remove the fish to plates and drizzle with sauce if desired.

1/4 cup creamy caesar salad dressing
1 cup caesar-flavor croutons, crushed

6 Tbsp light olive oil
1 tsp basil, dried
1 tsp salt
1 tsp pepper

--1 bunch or package dill
--1 large red onion, thinly sliced
--2 lb. or a little larger salmon fillet with the skin on
--2 large lemons, thinly sliced
--1/3 cup olive oil
--salt
--pepper

  • Preheat the oven to 450 degrees Fahrenheit. Arrange 1/2 of the dill in a single layer in the center of a heavy baking sheet. Arrange the sliced red onion on top of the dill. Place the salmon, skin side down, on top of the red onion. Sprinkle with salt and pepper. Cover the salmon with the remaining dill. Arrange the lemon slices over the dill. Drizzle on the olive oil. Sprinkle the lemon slices with salt. (The above can be prepared up to 8 hours ahead, if that timing is more convenient. If you have prepared the above ahead and refrigerated it, then let the salmon cook just a little longer.) To cook: Roast 20 to 25 minutes, until just cooked through. Let the salmon sit 5 to 10 minutes before cutting and serving (it cooks a little more, from the residual heat, while out of the oven). Remove the dill that's on top of the salmon, as it's probably been burned. The dill underneath will still be edible, though. Serve the salmon along with the roasted onion and the lemon slices that it was baked with.
