BEEF STIR-FRY

Beef Stir-Fry image

"The best thing about a stir-fry is that you can substitute the vegetables you like most."

Provided by Trisha Yearwood

Time 30m

Yield 4 servings

Number Of Ingredients 13

1 1/2 pounds skirt steak, cut into 4-inch-long pieces, then cut against the grain into 1/4-inch-thick slices
Salt and freshly ground pepper
1/4 cup low-sodium soy sauce
1 serrano chile pepper, seeded and finely chopped
2 teaspoons sugar
2 tablespoons freshly squeezed lime juice (1 to 2 limes)
2 tablespoons olive oil
2 cloves garlic, grated
1 bunch scallions, thinly sliced
6 ounces fresh mushrooms, sliced
1/4 pound snow peas or green beans
1 12-ounce can baby corn, drained
1 red bell pepper, thinly sliced (optional)

Steps:

  • Season the steak with salt and pepper. In a medium bowl, whisk together the soy sauce, chile pepper, sugar and lime juice until the sugar is dissolved. Add the beef, toss to coat and set aside.
  • In a large skillet over medium-high heat, heat the oil until shimmering, about 1 minute. Add the beef and cook, stirring, until cooked through, 3 to 5 minutes.
  • Remove the beef from the skillet and set aside. Allow the liquid in the pan to reduce until thickened, about 4 minutes. Add the garlic and scallions and cook 1 minute more. Add the mushrooms and cook for 2 to 3 minutes more. Add the snow peas, baby corn and bell pepper and continue cooking until all the vegetables are crisp-tender, about 2 minutes. Return the beef to the skillet and toss to combine.

Tips:

  • Choose lean cuts of beef: Select cuts of beef that are low in fat, such as sirloin, flank steak, or tenderloin. These cuts will help keep your stir-fry low in fat and calories.
  • Use a nonstick skillet: A nonstick skillet will help prevent the beef from sticking and will make it easier to clean up afterwards.
  • Cook the beef in batches: If you are cooking a large amount of beef, cook it in batches to prevent overcrowding the skillet. This will help ensure that the beef cooks evenly.
  • Don't overcook the beef: Beef should be cooked to an internal temperature of 145 degrees Fahrenheit for medium-rare, 160 degrees Fahrenheit for medium, or 170 degrees Fahrenheit for well-done. Overcooking the beef will make it tough and chewy.
  • Use fresh vegetables: Fresh vegetables will add color, flavor, and nutrients to your stir-fry. Choose vegetables that are in season and that you enjoy eating.
  • Stir-fry the vegetables until they are tender-crisp: Vegetables should be cooked until they are tender, but still have a little bit of crunch. Overcooking the vegetables will make them mushy.
  • Add a flavorful sauce: A flavorful sauce will bring all the ingredients together and make your stir-fry taste delicious. You can use a store-bought sauce or make your own.
  • Serve the stir-fry over rice or noodles: Stir-fry is traditionally served over rice or noodles. This helps to soak up the delicious sauce and makes the dish more filling.

Conclusion:

Low-fat beef stir-fry is a healthy and delicious meal that can be made in just 30 minutes. By following these tips, you can make sure that your stir-fry is packed with flavor and nutrients. So next time you're looking for a quick and easy weeknight meal, give low-fat beef stir-fry a try!
