1 whole head garlic
6 tablespoons olive oil, divided
1 ¼ teaspoons salt, divided
¾ cup diced white onion
½ teaspoon ground cayenne
½ pound heirloom cherry tomatoes
¼ cup dry white wine
1 ½ cups low-sodium chicken broth, or as needed
3 tablespoons unsalted butter

  • Preheat the oven to 375 degrees F (190 degrees C).
