CHICKEN CHILE VERDE

Chicken Chile Verde image

During culinary school I worked at a Mexican restaurant in Saranac Lake, NY, called Casa Del Sol. My favorite dish was the Chile Verde. In this version I simmer large chunks of chicken slowly in an exotic green sauce of tomatillos and chilies.

8 tomatillos, husked and quartered
2 fresh jalapeno peppers, chopped
6 cloves garlic
½ bunch cilantro

salt and freshly ground black pepper to taste

SLOW-COOKER GREEN CHICKEN CHILI

Slow-Cooker Green Chicken Chili image

This easy, slow-cooked chili is not your average "bowl of red." With chicken, sweet potatoes, tomatillo salsa, and pinto beans, it's more of a cross between chile verde (usually made with pork) and white chicken chili. Just a few ingredients and effortless prep gives you a flavorful and satisfying "bowl of green."

Easy Chicken Chile Verde (Crock Pot) image

Very easy, tasty, cheap and SO healthy! Just toss the ingredients in your crock pot in the morning and come home to dinner. All ingredients can be kept on hand for easy dinner any night of the week. I originally got this recipe from flylady.com . It's since become a staple at our house! I've shared the recipe with friends, and they love it. Apparently the men say its "Man food, very meaty & hearty!" Haha! My sis-in-law even served it to us when she invited us to dinner!

Time 4h2m

Yield 1 pot, 4-6 serving(s)

Number Of Ingredients 6

4 -5 boneless skinless chicken breasts
1 (16 ounce) jar salsa verde
1 (4 ounce) can diced anaheim chilies
1 (15 ounce) can great northern beans, drained
1 (15 ounce) can black beans, drained
steamed rice

Steps:

  • Toss everything but the rice into the crock pot. You can use fresh chicken breasts, but frozen are easier to keep stocked.
  • Cook on low 8 hours or high for 4.
  • Quickly shred chicken with two forks (or don't.) Serve over rice.

###
Tips
###
  • Prep the chicken ahead of time: If you're short on time, you can marinate the chicken overnight or for at least 30 minutes before cooking. This will help the chicken absorb the flavors of the marinade and make it more tender.
  • Use a variety of chiles: Feel free to experiment with different types of chiles, such as Anaheim, poblano, or serrano peppers. Just be sure to adjust the amount of chiles you use depending on how spicy you want the dish to be.
  • Don't overcrowd the slow cooker: Make sure there is enough space in the slow cooker for the chicken and the other ingredients to cook evenly. If the slow cooker is too crowded, the chicken will not cook properly.
  • Cook on low for best results: Cooking the chicken on low for 6-8 hours will help the meat become fall-off-the-bone tender. If you're short on time, you can cook the chicken on high for 3-4 hours, but the meat may not be as tender.
  • Shred the chicken before serving: Once the chicken is cooked, shred it with two forks. This will make it easier to eat and will help the chicken absorb the flavors of the sauce.
###
Conclusion
### This easy chicken chile verde crock pot recipe is a flavorful and versatile dish that can be served in a variety of ways. Whether you're looking for a quick and easy weeknight meal or a dish to impress your guests, this recipe is sure to please.
