Very tender and so flavorful, these Easy Chicken Kebabs are MUST TRY this summer! This is my go-to kebab recipe.

2 lbs boneless chicken thighs, cut into medium pieces
1/8 cup soy sauce
1/8 cup olive oil
1 tsp dried oregano
3 garlic cloves (minced)
1/2 lemon, juiced
3 multicolored bell peppers, cut into medium pieces

Steps:

  • Place the chicken pieces in the large bowl and add the rest of the ingredients. Mix everything well. Cover, and refrigerate for 2 to 24 hours (the longer, the better).
  • Preheat the grill to medium-high heat. Arrange the chicken and peppers onto the skewers.
  • Oil the grilling grate. Cook for about 7 minutes on each side, until the chicken is well done.

1 kg Chicken thighs (Boneless and skinless and cut lengthways )
150 g Natural yoghurt
2 tsp Paprika
2 tsp Ground cumin
0.5 tsp Cinnamon
0.5 tsp Dried chilli flakes
2 tsp Garlic granules ((or 3 cloves of fresh garlic))
1 Lemon (Zest and juice)
Salt and freshly ground pepper

Steps:

  • Mix the marinate ingredients together well in a large bowl.
  • Add the chicken thighs and marinade for at least 30 minutes or even better, overnight. (Cover with cling film and put in the fridge.)
  • Thread onto skewers and cook for about 20 minutes until golden on the outside and cooked through.

1 cup plain Greek yogurt
1 tablespoon vegetable oil
1/2 tablespoon fresh lemon juice
1 teaspoon dried oregano
1/2 teaspoon coriander
1/2 teaspoon paprika
2 cloves garlic, smashed and chopped
Kosher salt and freshly ground black pepper
2 pounds boneless, skinless chicken breast, cut into 1-inch cubes

Steps:

  • Mix the yogurt, oil, lemon juice, oregano, coriander, paprika, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper in a medium bowl until fully blended. Add the chicken and mix to coat. Cover and refrigerate for 2 to 4 hours.
  • Preheat a grill pan or outdoor grill for cooking over medium-high heat. Thread the marinated chicken onto the soaked skewers, about 5 pieces per skewer, taking care not to pack the chicken pieces too tightly.
  • Grill the skewers until the chicken is cooked through (an instant-read thermometer should register 165 degrees F), about 4 minutes per side. Serve immediately.

1 cup vegetable oil
½ cup soy sauce
½ cup light corn syrup
¼ cup lemon juice
2 tablespoons sesame seeds
½ teaspoon garlic powder
garlic salt to taste
4 skinless, boneless chicken breast halves - cut into 1 1/2 inch pieces
1 (8 ounce) package fresh chopped mushrooms
2 onions, quartered
1 green bell pepper, cut into large chunks

Steps:

  • In a medium bowl, blend vegetable oil, soy sauce, light corn syrup, lemon juice, sesame seeds, garlic powder, and garlic salt. Place chicken in the mixture. Cover, and marinate in the refrigerator at least 2 hours.
  • Preheat an outdoor grill for medium heat, and lightly oil grate. Thread chicken onto skewers alternately with mushrooms, onions, and green bell pepper. Pour marinade into a saucepan, and bring to a boil. Cook for 5 to 10 minutes.
  • Place skewers on the prepared grill. Cook 15 to 20 minutes, turning frequently, until chicken is no longer pink and juices run clear. Baste with the boiled marinade frequently during the last 10 minutes.

4 skinless chicken breasts , cut into bitesize chunks
2 red peppers , cut into chunks
1 red onion , cut into chunks
4 flatbread or pittas
chilli sauce and shredded lettuce to serve
1 tsp turmeric
1 tbsp mild or hot curry powder
2 tsp smoked paprika
1 tbsp tomato purée
150g natural yogurt , plus more to serve
1 tbsp vegetable oil , plus a little for brushing
1 garlic clove , crushed
2 tbsp lemon juice , plus wedges to serve

Steps:

  • Mix the marinade ingredients with some seasoning. Add the chunks of chicken, mix well, cover and chill. Leave to marinate for at least 2 hours or overnight.
  • Soak 12 bamboo skewers in cold water - this will prevent them burning when cooking (or use metal skewers). Thread the marinated chicken onto the skewers (discard any remaining marinade), alternating with pieces of pepper and onion. Brush the skewers lightly with oil and season.
  • Heat the grill to high. Grill the kebabs for 15 minutes, turning every few minutes, until golden and lightly charred. The veg should be tender, and the chicken cooked through, so it easily slides off the skewers.
  • Warm the flatbreads in a griddle pan or dry frying pan on a medium heat until golden and toasted. Serve with the kebabs, lettuce, chilli sauce, extra yogurt and squeeze over some lemon just before eating.

This is modified from Madhur Jaffrey's Quick & Easy Indian Cooking. I love her recipes, but find that they call for far more fat than my diet can sustain, so I've left all the flavor but cut the butter and oil. These are wonderful as either an appetizer to share with a crowd, or a main dish for 4. Just a note- turmeric stains, so please be careful not to get the marinade on your counter, or your clothes.

1 1/4 lbs boneless skinless chicken breasts
3/4 teaspoon salt
2 tablespoons fresh lemon juice
3 tablespoons plain yogurt
2 tablespoons chickpea flour (I just use AP flour)
2 teaspoons fresh ginger, grated
2 garlic cloves, minced
1/4 teaspoon cayenne pepper (more if you like it spicy)
1/4 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/2 teaspoon garam masala
4 teaspoons melted butter (for basting)

Steps:

  • Cut the chicken into 1 inch cubes. Put in a mixing bowl and rub with the lemon juice and 1/2 teaspoon of salt.
  • In a separate bowl, mix the yogurt and flour, whisking to combine well. Add the remaining 1/4 teaspoon salt, and the ginger, garlic, cayenne, turmeric, cumin, and garam masala. Mix well, then pour the yougurt mixture over the chicken. Mix to coat all of the chicken pieces, then set aside for at least 15 minutes. (You could leave in the refrigerator overnight at this point, if you wish.).
  • Preheat your broiler or grill to high heat.
  • Thread the chicken onto skewers (remember to soak the skewers first if you are using wooden ones, so they don't burn). Place on a broiling pan (if using the oven) or directly onto the grill grate. Baste with half of the melted butter.
  • Cook for five minutes, then flip and baste with the remaining butter. Cook for 2 - 3 more minutes, or until the chicken is cooked through.
  • Serve immediately.

2 pounds boneless, skinless chicken breasts, sliced crosswise into 1/2-inch thick slices
8 to 12 scallions
Wooden picks
1/4 cup reduced-sodium soy sauce
1 tablespoon honey
2 teaspoons dark sesame oil
1 teaspoon grated fresh ginger or ground ginger
1/4 teaspoon garlic powder
1/4 teaspoons sesame seeds, to garnish

  • Coat an outdoor grill or stove-top grill pan with cooking spray and preheat to medium- high.
  • Lay out 3 chicken strips, about 1/2-inch apart. Place a scallion crosswise over the center of the chicken pieces. Then wrap chicken over scallion 1 by 1, securing with a toothpick. Repeat process until you have used 1 pound of chicken.

1 tablespoon Worcestershire sauce
1/2 cup water
