500 g chicken breasts, all visible fat removed
150 g mushrooms
1 small leek
1/4 cup finely sliced shallots or 1/4 cup spring onion
1/3 cup extra light sour cream
190 g phyllo pastry, sheets thawed
1 tablespoon coarse grain mustard
1 teaspoon olive oil
1 pinch salt, to taste
pepper, to taste
canola oil cooking spray
dried herbs (optional)

Steps:

  • Thinly slice chicken breasts and lightly brown in a wok/ pan, using a little olive oil.
  • Add thinly sliced mushrooms and leeks to pan, cook until just softened (only about 1 1/2 minutes).
  • Add extra-light sour cream, shallots, mustard, salt and pepper, cook until combined (about 1 minute). Set aside.
  • Using 2 phyllo pastry sheets per pastry, place 1/6 of the mixture in centre and gently fold.
  • How you fold is up to you- -I recommend folding sheets in half first to prevent tearing.
  • Place folded parcels on baking paper-lined oven dish, and lightly spray with canola oil.
  • Sprinkle with mixed herbs.
  • Bake in moderate oven (180°C) for 10-15 minutes, or until pastry is crisp and chicken mixture heated.
  • To brown pastry, remove from oven and place under grill for about 1 minute.
  • Watch them though, they brown very quickly!
  • Serve with a side of green salad or veggies.

½ cup chopped mushrooms, or to taste
3 ½ ounces cubed fully cooked ham
1 stalk green onion, chopped
1 teaspoon crushed garlic
¼ cup milk, or more as needed
salt and ground black pepper to taste
1 (17.5 ounce) package frozen puff pastry, thawed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt butter in a frying pan over medium heat. Add oil. Add chicken and cook and stir until browned, 5 to 7 minutes. Add flour and stir until chicken is coated in flour.

Easy, uses frozen dumplings. Makes a big potful, had to guess at number of servings. I adapted this from the basic recipe on the frozen dumpling box. I always use Anne's Dumplings in the red box (www.annesdumplings.com) but you could use any brand frozen dumpling strips.

1 whole chicken
1 -2 bay leaf
water
salt and pepper
1 (1 1/2 lb) box frozen dumplings, strips
1 can campbell cream of chicken soup

Steps:

  • Rinse chicken and discard giblets.
  • In a large pot boil the chicken with bay leaves, salt and pepper.
  • Remove the chicken to a platter to cool; once cool enough to handle, remove meat from the bones.
  • Skim the fat from the broth and add enough water to get 4 or 5 qts (I use a skimmer cup).
  • Bring broth to a rolling boil and drop the frozen pastry strips in a few at a time, stirring to separate and return to a boil before dropping in more.
  • When all the strips are in the pot, reduce heat to medium-low and let boil a few minutes.
  • Reduce heat to low and stir in chicken meat and cream of chicken soup, stirring until chicken soup is incorporated.
  • Season to taste with black pepper- should already be salty enough from the cream of chicken soup, but taste and add salt if necessary.
  • Remove from heat, cover and let stand 15 minutes before serving.
  • I serve this with cornbread; green peas are a good side dish.
