Tips:

  • To ensure the best texture, make sure the coconut is finely shredded. This will help the coconut drops hold together better.
  • Use a combination of sweetened and unsweetened coconut flakes to create a balanced flavor.
  • If you don't have unsweetened shredded coconut, you can make your own by toasting sweetened coconut flakes in the oven at 350°F (175°C) for 5-10 minutes, or until golden brown. This will also bring out the coconut's flavor.
  • If you want a chewier coconut drop, add 1/4 cup (25g) of cornstarch to the mixture.
  • If you're using a silicone mold, lightly grease it with cooking spray before adding the coconut mixture. This will help the coconut drops pop out easily.
  • You can also shape the coconut mixture into balls and roll them in shredded coconut before placing them on a parchment paper-lined baking sheet.
  • Store the coconut drops in an airtight container at room temperature for up to 3 days.
