CREAMY CHICKEN ALFREDO

Creamy Chicken Alfredo image

I learned how to make creamy chicken Alfredo from my dad who has always been an incredible cook and amazing teacher. Chicken Alfredo was always my favorite. A lot of the recipes I see that are worthwhile are too much work because you have to make your own sauce, and those that don't have you make your own have no flavor. This recipe shows you how to take plain, bland, store-made sauce and make it more than restaurant-worthy.

Categories     Main Dish Recipes     Pasta     Chicken

Time 40m

Yield 12

Number Of Ingredients 14

2 pounds skinless, boneless chicken breasts, cut into chunks
salt and ground black pepper to taste
2 (16 ounce) packages thin spaghetti
4 (15 ounce) jars Alfredo sauce
2 tablespoons Italian seasoning
2 tablespoons garlic powder
2 tablespoons chopped onion
2 tablespoons chopped fresh basil
2 tablespoons salt
2 tablespoons ground black pepper
1 tablespoon onion powder
½ tablespoon cayenne pepper, or to taste
1 ½ cups shredded Parmesan cheese
2 cups chopped broccoli

Steps:

  • Season chicken with salt and pepper. Heat a large skillet over medium-high heat. Add chicken and cook until no longer pink in the centers and juices run clear, 7 to 10 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook thin spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, 8 to 10 minutes.
  • Meanwhile, add Alfredo sauce to the chicken along with Italian seasoning, garlic powder, onion, basil, salt, black pepper, onion powder, and cayenne. Bring to a slight boil; stir in Parmesan cheese. Cook mixture until cheese is melted and you are able to lift a spoon out of the sauce without cheese hanging onto it, 3 to 5 minutes.

CHICKEN ALFREDO CASSEROLE

Chicken Alfredo Casserole image

This family-friendly casserole is great for a large gathering. You can make and assemble it a day ahead, just bring it back to room temperature before baking. We like boneless skinless chicken thighs because they cook quickly and stay moist and tender.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h10m

Yield 8 to 10 servings

Number Of Ingredients 16

4 tablespoons unsalted butter, plus more for the baking dish
Kosher salt
1 1/2 pounds skinless, boneless chicken thighs, cut into large chunks
2 1/2 cups low-sodium chicken broth
6 cloves garlic (4 crushed, 2 chopped)
3 wide strips lemon zest, plus 1 tablespoon lemon juice
2 sprigs rosemary
2 bay leaves
1 pound penne
6 cups small broccoli florets (about 1 pound)
4 tablespoons all-purpose flour
2 cups heavy cream
Freshly ground pepper
1 1/4 cups grated Parmesan cheese
1/4 cup chopped fresh parsley
2 cups shredded low-moisture mozzarella cheese

Steps:

  • Preheat the oven to 400˚ F. Butter an 11-by-14-inch or other 4-quart baking dish. Bring a large pot of salted water to a boil.
  • Put the chicken in a dutch oven or other large pot, then add the chicken broth, crushed garlic, lemon zest, rosemary sprigs and bay leaves. Partially cover and bring to a simmer over medium-low heat. Cook, partially covered, until the chicken is tender, 20 to 22 minutes. Strain through a fine-mesh sieve (you should have 2 cups liquid; if necessary, add a little water to make 2 cups). When the chicken is cool enough to handle, tear or shred into small pieces. Wipe the dutch oven clean.
  • Meanwhile, add the pasta to the boiling water and cook until just al dente, adding the broccoli during the last 2 minutes of cooking. Drain the pasta and broccoli in a colander and rinse with cold water to stop the cooking. Let drain in the colander while you make the sauce.
  • Melt the butter in the Dutch oven over medium heat. Add the chopped garlic and cook until sizzling, about 30 seconds. Sprinkle in the flour and stir to make a paste; cook until the flour is no longer raw, 1 to 2 minutes. Whisk in the reserved 2 cups cooking liquid and the heavy cream; season with 1 teaspoon salt and a few grinds of pepper. Return to a simmer, whisking to make a smooth sauce. Cook over low heat until thickened, 3 to 4 minutes.
  • Remove the pot from the heat. Stir in 1 cup Parmesan, the parsley and lemon juice. Add the chicken, pasta and broccoli and stir to coat. Transfer to the baking dish and sprinkle with the remaining 1/4 cup Parmesan and the mozzarella. Bake until the top is golden and the edges are bubbly, about 25 minutes. Let rest 5 minutes before serving.

CHEESY, CREAMY ALFREDO CHICKEN CASSEROLE - FOREVERMAMA

Cheesy, Creamy Alfredo Chicken Casserole - Forevermama image

Nothing says comfort like a good chicken casserole. Perfect for using left-over chicken or turkey! Hey ladies & gents, use it when you don't know what to do with all the leftover Thanksgiving turkey. I normally cut up the chicken and mix the sauce ingredients the night before. Next day - all there is to do is put everything together, stick it in the oven and voila, dinner is ready in no time for those rushed weekday nights! Note that this serves 10ish, therefore you may want to halve it depending on size of family.

Provided by ForeverMama

Categories     Chicken

Time 1h15m

Yield 10 serving(s)

Number Of Ingredients 13

1 (16 ounce) package elbow macaroni or 1 (16 ounce) package penne pasta
2 cups mozzarella cheese, grated
1 small rotisserie chicken, chopped into large chunks
2 (14 ounce) jars alfredo sauce
1 (8 ounce) container sour cream (I imagine yogurt can be used to save on calories, but because I haven't used it, not sure of results)
1 (15 ounce) container ricotta cheese
2 teaspoons garlic and parsley seasoning (or 2 cloves of garlic, minced)
3/4-1 cup grated parmesan cheese
2 tablespoons onion powder
3 teaspoons lemon pepper seasoning (optional)
freshly grated black pepper (to taste)
1/4 teaspoon cayenne
1 cup fresh parsley, chopped

Steps:

  • Cook pasta according to package directions (adding salt and oil to water); drain and set aside. Grate mozzarella cheese and set aside.
  • In a bowl, mix together all remaining ingredients. Pour alfredo cheese mixture over chicken and mix thoroughly. (if making the night before, store bowl with alfredo/chicken mixture, another separate bowl with pasta and another bowl with mozzarella in the refrigerator = total of 3 bowls).
  • Preheat oven to 350 degrees Fahrenheit. Grease a 9 x 13" casserole dish.
  • Mix alfredo/chicken mixture with pasta and distribute evenly. Place in a prepared casserole dish. Sprinkle evenly with mozzarella cheese over the top of chicken mixture.
  • Place in preheated oven for 45 - 60 minutes or until bubbly and golden over the top.

Tips:

  • Use high-quality ingredients for the best flavor. Look for fresh chicken, heavy cream, Parmesan cheese, and Alfredo sauce.
  • Don't overcook the chicken. Cook it until it is just cooked through, or it will become dry and tough.
  • Use a good quality Alfredo sauce. You can make your own or use a store-bought brand. If you are using a store-bought sauce, be sure to taste it before you add it to the casserole. You may need to add some additional salt or pepper to taste.
  • Don't skimp on the cheese. Cheese is what makes this casserole so rich and creamy. Use a combination of Parmesan, mozzarella, and cheddar cheeses for the best flavor.
  • Top the casserole with bread crumbs or crushed crackers before baking. This will give the casserole a nice crispy topping.
  • Serve the casserole hot with a side of garlic bread or salad.

Conclusion:

Creamy chicken Alfredo casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great dish to make ahead of time and reheat for later. The casserole is made with cooked chicken, Alfredo sauce, cheese, and pasta. It is then topped with bread crumbs or crushed crackers and baked until golden brown. This casserole is sure to be a hit with your family and friends.
