NICK'S FAMOUS FLUFFY RICE AND CHICKEN CASSEROLE
It was my fault for not taking the package of chicken out of the freezer in the morning before I went to work and THEN at 4:30 actually thinking, "this will get done in time for supper." Still, dinner would've turned out well (delicious, even) if only a certain "someone" (who shall remain nameless, except for the recipe title!) could've waited another half-hour for the meat to cook through and the rice to get fluffy. :rofl: Instead, that long-ago dinner was a concoction of bloody-bone chicken and molar-tingling crunchy-hard rice in a soupy mess. - Preheat oven to 350 degrees (see baking instructions for alternate methods).
- Mix the 2 cans of soup, 1 can milk, and 1 cup of uncooked rice together. Add salt & pepper to taste.
- Pour above mixture into a 13x9x2 casserole dish.
- Cut the chicken into strips (about the width of a chicken tender/finger).
- Push the chicken strips down into the soup & rice mixture in the casserole dish so they are completely emerged.
- Sprinkle top with lemon pepper/salt/black pepper.
- Bake at 350 degrees 35-40 minutes or until chicken is finished. NOTE that cooking time will vary depending on how you choose to cut up the chicken. If using whole chicken breasts cook at 375 degrees for 45 minutes, or until finished.

I've been making this recipe for years, and decided to post it here for safe keeping, because the recipe card is getting very tattered. It's one of a series of recipe cards I would get in the mail from General Mills, many years ago. I usually used chicken thighs ( I prefer the dark meat) but would have to extend the cooking time by about 15 minutes or so. My family loved it and I still make it on occassion.

- Preheat oven to 350 degrees.
