SIMPLE GARLIC MASHED POTATOES

Simple Garlic Mashed Potatoes image

This is a fairly quick and simple version of garlic mashed potatoes. It goes well with just about any kind of meat or poultry, as well as many other meals. If you want to make this vegan or fleishig, reserve some of the cooking liquid to use in place of milk, and replace the butter with margarine.

Time 30m

Yield 4 serving(s)

Number Of Ingredients 5

4 large red potatoes, unpeeled, cut into uniform quarters
4 -5 large garlic cloves, peeled and cut in halves
butter
hot milk
salt and pepper, to taste

Steps:

  • Place potatoes and garlic into a large saucepan full of cold water. Bring to a boil over high heat, reduce heat to medium, and boil for about 10-12 minutes. Check potatoes for doneness by poking a few wedges with a fork or skewer--if still firm, cook another minute or two and check again. Repeat until tender. Drain, taking care not to lose garlic cloves. Return potatoes to warm pot.
  • Mash potatoes. Do not overwork, or potatoes will be tough (it's okay if there's a few lumps--it just means these are real potatoes, not from a box). Make sure to smash up the garlic, or pull out the cloves and squeeze in a garlic press.
  • Add some butter, to taste (I usually use 2-3 T), and salt and pepper, also to taste. Mix until butter has melted.
  • Add a little hot milk and beat it into the potatoes. Continue until potatoes are desired creaminess (the amount I use varies, but I usually use between 1/4 and 1/2 cup, give or take a bit).
  • Cover pot with foil to keep warm until ready to serve. Potatoes will stay hot for 10-15 minutes this way.
  • Serve with a pat of butter in an indentation on top.

Time 1h20m

Yield 8 to 10 servings

Number Of Ingredients 9

1 head garlic
Extra-virgin olive oil
3 pounds russet potatoes
Water
Kosher salt
1 1/2 cups heavy cream
3 sprigs rosemary
8 tablespoons (1 stick) unsalted butter, at room temperature
Freshly ground black pepper

Steps:

  • Heat the oven to 400 degrees F.

  • Meanwhile peel the potatoes, cut them into cubes, and put them into a medium sized pot. Cover them with water and add a big pinch of salt. Bring them to a boil over high heat, then lower the heat to medium and simmer until they are tender, about 20 minutes. Drain them well.
  • While the potatoes are cooking, warm the cream and rosemary in a small pot over low heat. When you are ready to mash, strain out the rosemary.
  • When the potatoes are dry but still hot, put them through a ricer into a large bowl. Squeeze in the garlic and add some of the warm cream. Mix well, then add the butter and mix again. Add more cream if they are too dry. Taste and adjust seasoning with salt and pepper. Serve immediately.

SILKY GARLIC MASHED POTATOES

Silky Garlic Mashed Potatoes image

Without a doubt, mashed potatoes are a quintessential side dish at just about every holiday-especially Thanksgiving. You can bet a hearty scoop of these garlic mashed potatoes will perfectly complement all that turkey and gravy. Butter and milk make these spuds extra smooth and silky, but the garlic is the real star of the show in the recipe. Instead of chopping up the garlic, this recipe calls for six peeled cloves (talk about easy) that go in right into the boiling water with the potatoes. The garlic will become tender and soft as it cooks making it super easy to seamlessly mash into your taters. Add a pinch of salt and pepper to enhance the flavors and you've got yourself a creamy, buttery and extra garlicky bowl of mashed potatoes.

CREAMY GARLIC MASHED POTATOES

Creamy Garlic Mashed Potatoes image

Categories     Food & Cooking     Dinner Recipes     Dinner Side Dishes

Number Of Ingredients 6

4 tablespoons unsalted butter
2 cloves garlic, smashed
1 1/2 pounds russet potatoes, peeled and cut into large chunks
1 1/4 teaspoons coarse salt
1/2 cup heavy cream
1/4 teaspoon ground white pepper

Steps:

  • In a medium saucepan, melt butter over medium-low heat. Add garlic and cook, stirring occasionally, until garlic caramelizes, 6 to 7 minutes. Remove from heat; let cool slightly.
  • Chop garlic and return to saucepan. Add cream and warm over medium heat.
  • Meanwhile, in a medium saucepan, combine potatoes and 1 teaspoon salt. Add just enough water to cover. Bring to a boil over high heat and cook until potatoes are easily pierced with a fork, about 12 minutes. Remove from heat and drain. Return potatoes to saucepan and cook, over medium heat, mashing with a heavy whisk, about 1 minute. Add garlic-cream mixture and continue mashing until smooth. Season with remaining 1/4 teaspoon salt and white pepper; mix well. Keep warm until ready to serve.

Tips:

  • Use Yukon Gold or Russet potatoes: These potatoes are ideal for mashed potatoes because they are fluffy and have a high starch content, which helps them to thicken and hold their shape.
  • Peel the potatoes before boiling: This will help to prevent the skins from becoming tough and stringy in the mashed potatoes.
  • Boil the potatoes in salted water: This will help to flavor the potatoes and prevent them from becoming bland.
  • Drain the potatoes thoroughly: This will help to prevent the mashed potatoes from becoming watery.
  • Mash the potatoes until smooth: Use a potato masher or a ricer to mash the potatoes until they are smooth and creamy. Avoid over-mashing, as this can make the potatoes gluey.
  • Add butter, milk, and seasonings to taste: Start with a small amount of butter and milk, and then add more as needed until you reach the desired consistency and flavor. Season the mashed potatoes with salt, pepper, and garlic powder to taste.
  • Garnish the mashed potatoes with fresh herbs: Chopped parsley, chives, or rosemary are all great options.

Conclusion:

Garlic mashed potatoes are a classic side dish that can be enjoyed with a variety of main courses. They are easy to make and can be tailored to your own taste preferences. Whether you like them creamy or chunky, garlicky or mild, there is a perfect recipe for you. So next time you are looking for a delicious and comforting side dish, give garlic mashed potatoes a try.
