I learned to make this when I was vacationing in Bermuda after high school. It has been 18 years, and this is still one of our favorite dishes ever! Yield 4

Number Of Ingredients 5

½ cup fresh lemon juice
½ cup soy sauce
½ teaspoon ground ginger
¼ teaspoon ground black pepper
4 (6 ounce) skinless, boneless chicken breast halves

Steps:

  • Rinse chicken breasts and pat dry with paper towels. Stir together the lemon juice, soy sauce, ginger, and black pepper in a bowl; pour into a large, resealable plastic bag. Add the chicken breasts, seal the bag, and massage to evenly coat chicken with lemon juice mixture. Place in refrigerator to marinate at least 20 minutes, or up to 24 hours.
  • Preheat an outdoor grill for medium-high heat. Lightly oil grill grate, and place about 4 inches from heat source.
  • Drain and discard marinade from the bag, and place chicken on preheated grill. Cook until chicken is no longer pink and juices run clear, 6 to 8 minutes on each side.

Tips:

  • Choose the right lemons: Use Meyer lemons if you can find them, as they have a sweeter, less acidic flavor. Otherwise, use regular lemons, but be sure to zest them before juicing to get the most flavor.
  • Don't overcrowd the grill: Give the chicken pieces plenty of space so that they can cook evenly. If the grill is too crowded, the chicken will steam instead of grill.
  • Cook the chicken over medium heat: This will help to prevent the chicken from drying out. If the heat is too high, the outside of the chicken will burn before the inside is cooked through.
  • Baste the chicken with the lemon-herb butter: This will help to keep the chicken moist and flavorful. Baste the chicken every few minutes, or more often if the grill is hot.
  • Let the chicken rest before serving: This will allow the juices to redistribute throughout the chicken, making it more tender and flavorful.

Conclusion:

Grilled lemon chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. The chicken is grilled until tender and juicy, and the lemon-herb butter adds a bright and flavorful touch. Serve the chicken with grilled vegetables or a simple salad for a complete meal.
