Time 1h

Yield 12

Number Of Ingredients 7

1 (18.25 ounce) package chocolate cake mix
½ cup butter, softened
1 teaspoon vanilla extract
2 eggs
½ cup semisweet chocolate chips
½ cup butterscotch chips
½ gallon vanilla ice cream, softened

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease baking sheets.
  • In a large bowl, mix together the cake mix, butter, vanilla extract, eggs, chocolate chips, and butterscotch chips. Roll dough into 2-inch balls and place them onto the prepared baking sheets. Bake for 10 minutes in the preheated oven. Do not overbake; the cookies should be set, but still soft. Let cool on the baking sheet for a few minutes before removing to finish cooling on wire racks.
  • Using an ice cream scoop, mold the softened ice cream into a ball about the size of the cookies. Place scoop of ice cream between two cookies and gently press together. If you like a smooth edge, run the back of a spoon around the edge of the ice cream sandwich. Working quickly, fill all of the cookies, lay out on a baking sheet, and place in the freezer to harden. Serve when the ice cream has frozen solid. Sandwich cookies can be stored in a freezer bag for up to two weeks.

Tips:

  • Choose the right ice cream. Not all ice creams are created equal when it comes to making ice cream sandwiches. You'll want to choose an ice cream that is firm enough to hold its shape, but not so hard that it's difficult to bite into. Some good options include:
    • Vanilla bean ice cream
    • Chocolate chip cookie dough ice cream
    • Mint chocolate chip ice cream
    • Strawberry swirl ice cream
  • Make sure your cookies are the right size. The cookies you use for your ice cream sandwiches should be about the same size as the ice cream scoops. If the cookies are too small, the ice cream will overflow. If the cookies are too big, they'll be difficult to eat.
  • Don't overfill the cookies. When you're adding the ice cream to the cookies, don't overfill them. You want to leave a little bit of room so that the ice cream doesn't overflow when you press the cookies together.
  • Press the cookies together firmly. Once you've added the ice cream to the cookies, press them together firmly. This will help to keep the ice cream sandwich together and prevent it from falling apart.
  • Freeze the ice cream sandwiches. After you've made the ice cream sandwiches, freeze them for at least 30 minutes before serving. This will help to firm them up and make them easier to eat.

Conclusion:

Ice cream sandwiches are a delicious and easy-to-make treat that can be enjoyed by people of all ages. With a little planning and preparation, you can make homemade ice cream sandwiches that are just as good as the ones you buy from the store. So next time you're in the mood for a sweet treat, give these ice cream sandwich recipes a try.
