12 oz. tomato paste (two 6 oz. jars or 340 grams)
1/4 cup cane sugar
1/4 cup water, plus more if needed
2 tablespoons + 1 teaspoon white vinegar
1 1/2 teaspoon sea salt
1 teaspoon garlic powder
dash cinnamon
pinch nutmeg

Steps:

  • In a saucepan, stir together all of the ingredients until combined and bring everything to a simmer.
  • Allow the ketchup to simmer, while stirring often, for about 5-10 minutes until the sugar has dissolved and everything is well combined.
  • If the ketchup is too thick, you can add more water 1 tablespoon at a time until it reaches your desired consistency. I like using 1/4 cup + 2 tablespoons of water total for my ketchup.
  • Taste and adjust the seasonings as desired, adding more sugar for sweetness, vinegar for tartness or salt for saltiness.
  • Turn off the heat and allow the ketchup to cool completely before transferring it to an airtight jar or container.

2 kg (70 oz) ripe plum tomatoes
2 cloves of garlic
1 red onion
1 red pepper
1 small chilly-pepper
1 laurel leaf
2 tablespoons of vinegar
1 small bunch on parsley
15 leaves of basil
7 cloves
1 tablespoon of cooking salt
120 g (4,2 oz) of brown sugar
7 gr (0,25 oz) of mustard seeds
1 pinch of pepper

Steps:

  • Clean and cut into chunks the tomatoes, the red pepper and te onion. Put all the vegetables in a big saucepan and add laurel, garlic, vinegar, chilly-pepper, parsley and basil leaves. Stir and cook over a low heat for 2 hours.
  • Strain the sauce in the vegetable mill and put it again in the saucepan adding cloves, salt, brown sugar, mustard seeds and pepper.
  • Cook again over a low heat for at least 30 minutes or until the sauce gets to the right thick consistency.
  • Put the sauce in the already sterilized jars and proceed with their pasteurization in order to preserve the sauce for winter times.

3 pounds beef chuck roast
3 (1 ounce) packages dry Italian salad dressing mix
1 cup water
1 (16 ounce) jar pepperoncini peppers
8 hamburger buns, split

Steps:

  • Place the roast into a slow cooker, and season with Italian dressing mix. Pour in the water. Cover, and cook on High for 6 to 7 hours. During the last hour, shred the meat with two forks - if it does not shred easily, cook longer. Add the peppers, and as much of the juice as you like for additional flavor. Serve on buns.
