1/2 cup confectioners' sugar, plus more for dusting
1/4 teaspoon salt
1 cup all-purpose flour, (spooned and leveled)
4 large egg yolks
1 can (14 ounces) sweetened condensed milk
3/4 cup fresh lemon juice (from about 3 lemons)

Another cookie recipe for my "to try" list from Canadian Living Muffins and Cookies. *Preparation time includes 30 minutes refrigeration time

Provided by Dreamer in Ontario

Categories     Dessert

Time 57m

Yield 36 cookies

Number Of Ingredients 4

1 cup butter (no substitutes)
1/2 cup granulated sugar or 1/2 cup packed brown sugar
2 tablespoons lemon rind, grated
2 cups all-purpose flour (or 1 cup all-purpose and 1 cup whole wheat or graham flour)

Steps:

  • Using a large bowl, cream butter and beat in sugar until light and fluffy.
  • Stir in lemon rind.
  • Gradually stir in flour until blended.
  • Shape dough into 2 equal discs, wrap in plastic wrap and refrigerate for about 30 minutes until chilled.
  • Preheat oven to 300F.
  • Between 2 sheets of waxed paper, roll out dough to 1/4 inch thickness.
  • Using a 2 inch floured cutter, cut out cookies and place on an ungreased baking sheet.
  • Bake in 300F oven for 17 to 30 minutes until lightly browned on bottom.
  • Remove from oven and allow cookies to cool on racks.

Tips:

  • Use fresh lemons: Fresh lemons will give your Lemon Shorties a brighter, more flavorful taste.
  • Grate the lemon zest finely: This will help release the lemon's oils and give your Lemon Shorties a more intense flavor.
  • Cream the butter and sugar together until light and fluffy: This will help incorporate air into the mixture, resulting in a lighter, more tender cookie.
  • Add the eggs one at a time, beating well after each addition: This will help prevent the mixture from curdling.
  • Stir in the flour and baking powder gradually: This will help prevent the mixture from becoming too tough.
  • Chill the dough for at least 30 minutes before baking: This will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies until they are just set: Overbaking will make the cookies dry and crumbly.
  • Let the cookies cool on a wire rack before frosting: This will help prevent the frosting from melting.

Conclusion:

Lemon Shorties are a classic and easy-to-make cookie that is perfect for any occasion. They are light, fluffy, and have a bright, lemony flavor. These cookies are sure to be a hit with everyone who tries them.
