8 ounces cremini mushrooms
1 tablespoon butter
1 tablespoon olive oil
1/2 cup dry red wine
3/4 cup beef broth
2 tablespoons flour
3 tablespoons cold water
1 teaspoon dried parsley flakes
salt and pepper, to taste

Steps:

  • Saute mushrooms in butter and oil for 3-5 minutes, stirring occasionally.
  • Add red wine and simmer for a few minutes.
  • Add beef broth and simmer to reduce a bit, about 5 minutes.
  • Combine flour and cold water and whisk until smooth. Stir into the mushrooms until well blended.
  • Season to taste and simmer for about 1 minute, until thickened. If too thick, add a bit more broth.
  • Add parsley.

1 lb sweet sausage, casings removed
3/4 lb baby portabella mushrooms, chopped & sliced
1/4 teaspoon crushed red pepper flakes
3/4 cup canned reduced-sodium chicken broth
3/4 cup whipping cream
1 tablespoon butter
1 lb penne
1 cup fresh parmesan cheese, grated

Steps:

  • In a large skillet, over medium heat saute sausage (casings removed) until crumbled and brown.
  • Remove to a paper towel-lined dish with a slotted spoon.
  • Add butter, mushrooms and crushed red pepper to same skillet and saute in sausage drippings.
  • Cover, cook until mushrooms are tender - about 5 minutes.
  • Add chicken broth and whipping cream to skillet - reduce heat to low. Occasionally stirring as sauce thickens.
  • In different pot, cook pasta according to directions on box. Drain pasta. Return to same pot.
  • Add sausage, mushroom mixture, and cheese to pasta.
  • Toss over medium heat, until pasta is coated and sauce begins to thicken.
  • Season with salt and pepper to taste.
  • **Add more chicken broth if sauce seems dry.

2 tablespoons olive oil
1 onion, diced
4 garlic cloves, minced
1 (10 1/2 ounce) can low-fat cream of mushroom soup
1/2 cup low-fat sour cream
1/2 cup chicken broth or 1/2 cup white wine
1 tablespoon Worcestershire sauce
1 1/2 teaspoons ground black pepper
1/3 cup parmesan cheese, grated (even the powdery kind is fine)

Steps:

  • Set water for cooking pasta on to boil. Cook pasta for time indicated on box, drain.
  • While boiling water and cooking pasta, bring olive oil to heat over medium high in sauce pan.
  • Add in onion, sautee for 5 minutes or until soft, add in garlic and continue to sautee for 2 more minutes.
  • Stir in sour cream, can of soup, broth (or wine), worchestershire and pepper, stir until smooth. Reduce heat to medium and bring to simmer.
  • When sauce is thickened to your liking, stir in parmesan cheese then combine with the cooked, drained pasta.

This is a quicker version of my basic tomato sauce. I cut several corners in this recipe, without sacrificing too much. Instead of pureeing the tomatoes for a smooth sauce, I leave it chunky. I do not use a knife or cutting board for the preparation (although you could, of course). Rather, I use an egg slicer to slice mushrooms and a garlic press to mince garlic. The sauce is started when the pot of water for the pasta is put on the stove. When the pasta is cooked, the sauce is ready.

1/2 tablespoon extra virgin olive oil
10 medium white button mushrooms, wiped clean
salt
pepper
3 garlic cloves
red pepper flakes
1 (28 ounce) can whole canned tomatoes
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1 teaspoon sugar
1 dried bay leaf
1 tablespoon chopped fresh parsley

Steps:

  • Start by heating the oil over medium-low heat in a large pan.
  • Slice mushrooms with egg slicer.
  • When all the mushrooms are sliced, raise the heat on the pan to medium and add the mushrooms.
  • Cook, stirring occasionally, for a few minutes until the mushrooms are tender and their juices released.
  • Season the mushrooms with salt and pepper and reduce the heat to medium-low.
  • Using the garlic press, place a clove of unpeeled garlic into the press and add right to the pan (using a fork to get the garlic off the press as necessary). Discard the peel, and continue with the remaining garlic.
  • Stir in the pressed garlic and add a small pinch of red pepper flakes.
  • Open the can of tomatoes and pour the liquid right into the pan.
  • With a kitchen scissor, chop the tomatoes coarsely, right in the can, then, add them to the sauce.
  • Add more seasoning, the bay leaf and dried basil, thyme and sugar, then simmer uncovered for about 15 minutes (while the pasta cooks).
  • When it is almost time to serve, add a little of the pasta cooking liquid to the sauce.
  • Using the scissors, snip the parsley leaves into the sauce.
  • I taste for seasoning, discard bay leaf and serve over cooked pasta.

2 cups sour cream
1 cup fresh sliced mushrooms

  • Use a meat pounder to flatten the chicken breats. Place 1 slice of ham and 1 slice of cheese in the center of each breast. Roll up and place seam side down in a casserole dish. Securing with a toothpick if necessary. Bake, covered, for 20 minutes at 350 degrees or until the chicken is no longer pink and juices run clear. While it is baking, mix together remaining ingredients. Pour over cooked chicken and bake until sauce bubbles. I usually serve this over egg noodles
