ROASTED SALMON GLAZED WITH BROWN SUGAR AND MUSTARD

Roasted Salmon Glazed With Brown Sugar and Mustard image

This is what we call around here a no-recipe recipe, the sort of meal you can cook once off a card and you'll know it by heart: salmon glazed with brown sugar and mustard. The preparation could not be simpler. Heat your oven to 400. Make a mixture of Dijon mustard and brown sugar to the degree of spicy-sweetness that pleases you. Salt and pepper the salmon fillets. Place them skin-side down on a lightly oiled, foil-lined baking sheet, slather the tops with the mustard and brown sugar glaze and slide them into the top half of your oven. They ought to be done in 12 minutes or so, and they pair beautifully with simple braised greens.

Worthy of company or to treat yourself with little effort. I did substitute dill for the rosemary. I served it with gruyere potato gratin and sugar snap peas.

Tips:

  • Choose the right salmon fillet: Look for a fillet that is about 1 inch thick and has a deep pink color. Avoid fillets that are thin or have a pale color.
  • Use fresh herbs: Fresh herbs, such as dill and parsley, will add a lot of flavor to the salmon. If you don't have fresh herbs on hand, you can use dried herbs, but be sure to use less.
  • Don't overcook the salmon: Salmon is a delicate fish that cooks quickly. Overcooked salmon will be dry and tough. Cook the salmon for just 10-12 minutes, or until it is cooked through but still flaky.
  • Let the salmon rest before serving: After you remove the salmon from the oven, let it rest for a few minutes before serving. This will allow the juices to redistribute throughout the fish.

Conclusion:

Mustard-glazed broiled salmon is a quick and easy weeknight meal that is packed with flavor. The mustard glaze adds a tangy, slightly sweet flavor to the salmon, and the broiling method cooks the salmon quickly and evenly. This recipe is also a great way to get your daily dose of omega-3 fatty acids. Serve the salmon with your favorite sides, such as roasted vegetables, mashed potatoes, or rice.
