1 cup shredded part-skim mozzarella cheese
1 cup shredded cheddar cheese
1 can (4-1/4 ounces) chopped ripe olives, drained
1/2 cup mayonnaise
1/3 cup chopped green onions
Triscuit crackers

Steps:

  • In a large bowl, combine the first five ingredients. Spread on crackers. Place on an ungreased baking sheet. Bake at 375° for 7 minutes. Serve immediately.

1/2 cup green olives, drained
1/2 cup black olives, drained
1 tablespoon capers, drained
1 -2 clove garlic, mashed (to your taste)
1/4 cup olive oil

Steps:

  • Put all ingredients, except olive oil in the food processor and pulse until chopped.
  • Turn processor on low setting and gradually add olive oil until you get a grainy texture.
  • I stop and start and scrape down the sides as I am going.
  • I try to add as little oil as possible, but enough to hold the mixture together so it will spread nicely.
  • Serve with slices of grainy baguette.
  • This is wonderful and easy.

Sometimes I like to toast English Muffins and serve this as a sandwich. You can substitute the olives to green and it is still delicious.

1 cup cheddar cheese, shredded
1 (4 1/4 ounce) can black olives, drained and chopped
1/2 cup mayonnaise

bagels or English muffin

Steps:

  • In a medium bowl combine all ingredients (except crackers/bagels).
  • Mix well.
  • Spread on crackers and place on ungreased baking sheet. If using bagels or English Muffins, toast them first to crisp them.
