EASY ORANGE SALAD/DESSERT
I'm prefacing this recipe with I'm pregnant and have some strange cravings these days! I really like the combination of cottage cheese and sour cream. I came up with this salad as a result of looking over oodles of recipes! Any flavor of jello will work - you may want to change the fruit to compliment the jello flavor you are using. **Cooking time is chilling time. Updated -- I remade this and agree with reviewer, the jello does need to be dissolved or it will be gritty. This is not a sweet salad, so if you want it sweeter, you would need to use whipped cream or add sugar.

MIXED GREEN SALAD WITH ORANGE DRESSING RECIPE BY TASTY
This yummy mixed green salad with orange dressing is a perfect side dish to make for a dinner party or brunch that won't break the bank. To save money, use a snack pack of honey-roasted nuts you find in the check-out aisle to add a nice crunch. The oranges work double duty--the segments go in the salad and the juice is used in the dressing.

Steps:
- Segment the oranges: Cut off the tops and bottoms of the oranges so they sit flat on a cutting board. Use a knife to remove the rind of the orange, cutting carefully to remove as little flesh as possible. Use a paring knife to cut between the membranes to remove the orange segments. Transfer to a small bowl. Squeeze the juice from the scraps into a separate bowl.
- Make the dressing: Strain the orange juice into a microwave-safe liquid measuring cup to remove any pulp and seeds. You should have about ¼ cup. Add the lemon juice and sugar. Microwave for 60 seconds, until the sugar dissolves.
- Let cool, then whisk in the olive oil. Season with salt and pepper.
- Assemble the salad: Add the mixed greens to a large bowl. Add the avocado, segmented oranges, red onion, and honey-roasted nuts.
- Just before serving, pour some of the dressing over the salad and toss to coat. Add more dressing to taste.
- Enjoy!

ORANGE JELLO SALAD
Steps:
- Mix together 4 cups of water, orange jello mix, and vanilla pudding mix in a sauce pan. Bring to a boil, stirring the whole time to keep clumps from forming. Once it starts to boil, remove from heat. Pour into a heat-resistant container (I usually use a glass baking dish), cover with plastic wrap and place in the fridge for about four hours. Remove from fridge and break up the jello into chunks. Place in a large bowl. Add in the pineapple, mandarin oranges, and whipped cream and mix around until everything is combined. Keep refrigerated until you are ready to serve.

Tips:
- Selecting the Right Oranges: Choose oranges that are heavy for their size, have smooth, unblemished skin, and a deep orange color. Avoid oranges with green patches, as they may be less ripe and less flavorful.
- Zesting Oranges: To zest an orange, use a fine grater or a Microplane zester to grate the outermost layer of the orange peel. Be careful not to grate too deeply, as you don't want to include the bitter white pith.
- Segmenting Oranges: To segment an orange, use a sharp knife to cut off the top and bottom of the orange. Then, score the orange from top to bottom, following the natural segments. Carefully peel away the segments, removing any remaining pith.
- Preparing Mint Leaves: For the best flavor, use fresh mint leaves. Rinse the mint leaves thoroughly and pat them dry. If the leaves are large, you can tear them into smaller pieces.
- Chilling the Salad: Before serving, chill the orange salad for at least 30 minutes. This will help the flavors to meld and the salad will be more refreshing.
Conclusion:
This easy orange salad is a delicious and refreshing dessert that is perfect for any occasion. It is light and flavorful, with a perfect balance of sweet and tangy. The oranges provide a burst of citrus flavor, while the mint adds a refreshing touch. This salad is also a good source of vitamins and minerals, making it a healthy choice as well. Whether you are looking for a simple dessert to serve at a party or a healthy snack to enjoy on a hot summer day, this orange salad is sure to please.
