PHILLY CHEESESTEAKS

Philly Cheesesteaks image

For Philadelphians, there's no hotter debate than who serves the best cheesesteak: Pat's King of Steaks or Geno's Steaks. By most accounts, Pat Olivieri invented the sandwich of thinly sliced beef and onions in the 1930s; the cheese came along a decade later. Geno's opened a few feet from Pat's in 1966 with an almost identical menu, and the rivalry began. Today, Pat's sandwiches have chopped steak; Geno's have sliced.

PHILLY CHEESESTEAK

Philly Cheesesteak image

My Philadelphia-born friend is so devoted to her city's most famous sandwich that the first thing she did after her big fancy wedding was to head, gown and all, to her favorite local spot for a cheesesteak to end the night. On a recent visit, I comparison-shopped the cheesesteak sandwich shop. Here's my standard order: onions, whiz (i.e., Cheez Whiz), provolone, and giardiniera -- the pickled vegetables perk up the whole meaty, cheesy business. Regardless of where you buy it, everything starts with the vigorous chopping and flipping spatulas cutting through the frying beef a-sizzle on the flattop. Beyond that, the rest is personalized. Add the whiz? provolone? onions? peppers? giardiniera? You better know what you want before you step up to the counter. Yield Makes 2 sandwiches

Number Of Ingredients 9

One 1-pound boneless beef top round steak
1/2 medium onion, chopped
1 tablespoon safflower oil
1 tablespoon coarse salt
1/4 teaspoon freshly ground black pepper
Two 8-inch-long hero rolls
4 slices provolone cheese
1 cup Creamy Cheese Sauce
Giardiniera for garnish

Steps:

  • To make slicing it easier, freeze the beef for 30 minutes to firm up.
  • Preheat a double-burner griddle or two large skillets over medium-high heat. Thinly slice the meat against the grain.
  • Toss the onions in a bowl with the oil and put them on the griddle. Cook for a few minutes, stirring occasionally, until the onions become translucent. Push the onions to the back of the griddle.
  • Place the beef on the griddle and season with salt and pepper. Cook, turning occasionally, until no pink remains. Stir the onions into the beef and chop the beef mixture into bite-size pieces with the side of a metal spatula.
  • Divide the beef and onions between the hoagie rolls. Top with the provolone and cheese sauce. Serve immediately, topped with giardiniera, if desired.

A REAL PHILLY CHEESESTEAK

A Real Philly Cheesesteak image

I come from Philly and now live in Alaska. What they think is a Philly Cheese Steak involves green peppers and onions. So if thats what you are looking for, then no dice. If you want something similar to what they sell in every pizza place in the philly metro area, this is as close as you can get from outside the state

Provided by Fleischer

Categories     Lunch/Snacks

Time 20m

Yield 4 serving(s)

Number Of Ingredients 5

1 lb rib eye, frozen, then cut very thin
onion
mushroom
provolone cheese or Cheese Whiz
4 hoagie rolls

Steps:

  • MEAT: Make friends with your butcher. You need him to partially freeze a hunk of Rib Eye, and then slice it very thin. You want it sliced thin even though common sense tells us that thick is better. You can buy the hunk of rib eye and freeze and slice it yourself, but the butcher generally does a better job than I do. I can only get it about 1/8" thick and he does about.
  • BREAD: This is the hard part. If you aren't in the tristate area, and can't get AMOROSOS rolls (the only thing that is REALLY good on a cheesesteak) then you have to find a substitute. Squishy sub rolls will NOT do. They do not hold together under pressure. Refrain from buying those "hero" rolls too. A good hoagie roll is almost rubbery in texture, but quite soft. The best substitute I have found is a loaf of French bread. Not as good as the real thing, but hey, beggars can't be choosers.
  • Toppings: All of this is personal choice. I like fried onions and mushrooms myself.
  • Cheeses used vary - I hate to admit it but I think cheese whiz tastes the best. Provolone is awesome too and thats what I would use if I was afraid of the plastic orange stuff called whiz.
  • Cooking the steak: In a cast iron frying pan, or a grill pan heat some oil. Saute toppings until pliable - make them however you like them. Remove them from pan and set aside.
  • Pour some more oil in the pan (I use olive oil, but if you have access to the stuff they use in restaurants on grills it would taste even better) on medium high heat. Place 1/4 to 1/3 of a pound of meat in the pan, lying the pieces flat and overlapping to form a shape that will fit nicely in a bun.
  • When the meat turns grey with doneness, flip it over and if you are using cheese slices now is the time to lie them on top of the meat. Add the other toppings back into the pan next to the meat and allow to reheat. Cover the pan to allow the cheese to melt. This should take 1-2 minutes. If the meat looks overcooked, thats ok - i t should be GRAY.
  • This is the time to toast the bread if you so wish. I don't like mine toasted at all. Warmed is ok.
  • If you are using cheese whiz, warm it in the microwave. Pick up meat and melted cheese with a spatula and deposit on the roll. IF using cheese whiz, use a butter knife or chopstick to smear whiz next to the meat.
  • Push the meat on one side of the roll and deposit the toppings next to it. This is important because if you put the toppings ON the meat, they will not be in the bottom of the sandwich, which really sux.
  • You should get meat, toppings and cheese in every bite.

MINI PHILLY CHEESESTEAKS

Mini Philly Cheesesteaks image

Miniaturized sandwiches don't usually float my boat, or submarine, as they're almost always not as good as the full-sized versions, but these mini Philly cheesesteaks really captured everything I love about the classic.

Time 1h20m

Yield 12

Number Of Ingredients 15

2 tablespoons butter, or as needed
2 tablespoons all-purpose flour, or as needed
1 cup cold milk
2 ounces shredded provolone cheese, or more to taste
1 pinch ground nutmeg
1 pinch cayenne pepper
salt to taste
1 (12 ounce) skirt steak
salt and freshly ground black pepper to taste
3 tablespoons olive oil, divided, or as needed
¼ cup water
⅓ cup diced onion
⅓ cup diced sweet peppers
2 baguettes, or as needed, cut into 48 1/2-inch thick slices
¼ cup shredded provolone cheese, or as needed

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line baking sheets with aluminum foil.
  • Melt butter in a skillet over medium-high heat. Whisk flour into hot butter and cook, whisking constantly, until mixture is pale and flour taste cooks off, about 1 minute. Pour milk into flour mixture and cook, whisking constantly, until mixture is hot and thickened, 3 to 6 minutes. Add 2 ounces provolone cheese, nutmeg, cayenne pepper, and salt; stir until cheese is completely melted. Remove from heat.
  • Season steak all over with salt and ground black pepper.
  • Heat 1 tablespoon olive oil in skillet over medium-high heat. Cook steak in hot oil, turning occasionally, until meat is slightly firm and pink on the inside, 5 to 7 minutes. Transfer meat to a plate.
  • Return skillet to heat and pour water into the skillet; bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Pour liquid from the skillet over steak. Cool steak to room temperature; dice meat and place meat and accumulated juices from the plate into a large bowl.
  • Heat 1 tablespoon oil in a skillet over medium-high heat; saute onion and peppers in hot oil until softened and slightly translucent, about 5 minutes.
  • Stir peppers and onions mixture into diced meat; season with salt and pepper.
  • Spread bread slices out on prepared baking sheets and drizzle remaining olive oil over the top. Turn slices over so that the oiled-side is facing down. Spread a thick layer of cheese mixture onto each slice. Spoon meat mixture over cheese. Sprinkle provolone cheese over the top of each slice.
  • Bake in the preheated oven until browned and cheese is melted, 12 to 15 minutes.

Tips:

  • Choose the right bread. A classic Philly cheesesteak is made with a long, soft roll that can hold all the fillings without getting soggy. Look for a roll that is at least 12 inches long and has a slightly chewy texture.
  • Use thinly sliced steak. The steak should be sliced against the grain so that it is tender and easy to chew. You can use any type of steak for a Philly cheesesteak, but rib-eye or top sirloin are good choices.
  • Cook the steak correctly. The steak should be cooked to your desired doneness, but it is important not to overcook it. Overcooked steak will be tough and chewy.
  • Use plenty of cheese. Cheese is a key ingredient in a Philly cheesesteak, so don't be shy about using it. You can use any type of cheese that you like, but American cheese, provolone, and Cheez Whiz are all popular choices.
  • Add your favorite toppings. Traditional toppings for a Philly cheesesteak include grilled onions, mushrooms, and peppers. You can also add other toppings that you like, such as bacon, avocado, or jalapeños.

Conclusion:

A Philly cheesesteak is a delicious and iconic sandwich that is easy to make at home. By following these tips, you can make a Philly cheesesteak that is just as good as the ones you get from your favorite restaurant.
