1 (20 ounce) can pineapple tidbits, drained
1 (20 ounce) can crushed pineapple, partially drained
⅔ cup white sugar
5 tablespoons all-purpose flour
1 stick butter, melted
1 ½ cups shredded orange Cheddar cheese
1 sleeve crushed buttery round crackers (such as Ritz®)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix pineapple tidbits and crushed pineapple together in a bowl and layer into the bottom of a 9x13-inch glass baking dish. Mix sugar and flour together in a bowl and sprinkle mixture over pineapple. Spread Cheddar cheese on top. Cover everything with crushed crackers. Drizzle with melted butter.
  • Bake in the preheated oven until bubbly, 30 to 40 minutes. Serve hot, warm, or at room temperature.

After researching many pineapple casserole recipes on this site, I couldn't find exactly what I was looking for, so I created this one with inspiration from a somewhat similar recipe. I've made it twice now, and am happy with the current results.

1 (20 ounce) can crushed pineapple, undrained
1/2 cup uncooked white rice
1 cup water
1 medium green bell pepper, chopped into 1/2-inch dice
1 small white onion, diced
2 tablespoons brown sugar, divided
1 (12 ounce) package kielbasa, sliced into 1/2-inch coins

Steps:

  • Preheat oven to 350 degrees.
  • In an oven safe 9x11x2" baking dish pour undrained pineapple and 1 cup of water. Add uncooked rice, onion, bell pepper and 1 tblsp of the brown sugar. Stir thoroughly. Top with kielbasa coins and sprinkle with remaining brown sugar. Cover with aluminum foil and bake for approximately 60 minutes.
  • Note: Cooking time may depend on the brand of long grained white rice you use. Check after 45 minutes. I do not recommend Minute Rice.

1/2 c crushed pineapple with juice
1/4 c light brown sugar packed
3 Tbsp butter

Steps:

  • 1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish
  • 2. In a large soup pot, boil sweet potatoes whole until soft. Remove skins, and dice into bite-sized pieces.
  • 3. Mix sweet potatoes, crushed pineapple, light brown sugar, and butter in prepared baking dish.
  • 4. Bake for 45 minutes, or until casserole is mushy with no excess water in the dish.
