Yield 15

Number Of Ingredients 9

1 cup margarine
1 ½ cups water
½ teaspoon salt
¼ cup white sugar
3 (.25 ounce) packages active dry yeast
¼ cup white sugar
1 cup warm water (110 degrees F/45 degrees C)
2 eggs, beaten
6 cups self-rising flour

Steps:

  • In a small saucepan, heat margarine and water over low heat. When margarine has melted, remove pan from heat and stir in salt and 1/4 cup sugar.
  • In a small bowl, dissolve yeast and 1/4 cup sugar in 1 cup warm water. Let stand until creamy, about 10 minutes.
  • In a large bowl, combine yeast mixture and margarine mixture. Stir in beaten eggs and 2 cups self-rising flour. Beat in remaining flour 1 cup at a time, mixing well after each addition, until a stiff dough is formed. Divide dough into two pieces and place each piece in a well oiled freezer bag. Refrigerate for at least 24 hours.
  • Remove dough from refrigerator. Pull off pieces of dough and form into 2 inch diameter balls. Place in lightly oiled baking pans so that edges of balls are just touching. Cover and let rise in a warm place until doubled in volume, about 2 hours.
  • Preheat oven to 375 degrees F (190 degrees C). Bake dough balls 15 minutes, until golden brown.

Number Of Ingredients 7

3 pkg active dry yeast
3 c Warm water
3/4 c sugar
6 Tbsp butter, melted
2-l/4 tsp salt
2 eggs, beaten
9 3/4 c flour

Steps:

  • 1. Sprinkle yeast over warm water in large bowl. Stir until dissolved. Blend in next 4 ingredients & mix well. Add one-half flour. Beat for 2 minutes. Add remaining flour & mix well. Shape into ball & place in well greased large bowl. Turn to coat. Cover & let rise until double, about 1-1/2 to 2 hrs depending on room temp. Punch down, pull edges to center & turn over. Again coat lightly with oil. Cover well & refrigerate at least 2 hours but can be kept several days. Remove & shape into rolls & place in well greased baking pan. Let rise until double about 1-1/2 - 2 hrs. Bake 375 degrees approx 20 min or until lightly browned. Makes 4-1/2 doz. rolls. Just bake a few at a time as needed.

Tips:

  • Use fresh, active yeast for best results.
  • Proof the yeast in warm water with a little bit of sugar before adding it to the dough. This will help to ensure that the yeast is active and will produce a light and fluffy dough.
  • Knead the dough until it is smooth and elastic, about 10 minutes. This will help to develop the gluten in the flour and will produce a strong and chewy roll.
  • Let the dough rise in a warm place until it has doubled in size, about 1 hour. This will allow the yeast to produce carbon dioxide gas, which will make the rolls light and airy.
  • Shape the dough into rolls and place them in a greased baking dish. Let the rolls rise again until they have doubled in size, about 30 minutes. This will help to ensure that the rolls are evenly cooked.
  • Bake the rolls in a preheated oven until they are golden brown, about 20 minutes. Let the rolls cool slightly before serving.

Conclusion:

Refrigerator yeast rolls are a delicious and easy-to-make bread that can be enjoyed for breakfast, lunch, or dinner. With a few simple ingredients and a little bit of time, you can create light and fluffy rolls that are perfect for any occasion. So next time you're looking for a quick and easy bread recipe, give these refrigerator yeast rolls a try. You won't be disappointed!
