1 packet dry onion soup mix
1 cup water
3 carrots, chopped
1 onion, chopped
3 potatoes, peeled and cubed
1 stalk celery, chopped

Steps:

  • Season the roast with salt and pepper to taste. Brown on all sides in a large skillet over high heat, about 4 minutes per side.

1 boneless beef rump or chuck roast (3 to 3-1/2 pounds)
1 tablespoon canola oil
6 medium carrots, cut into thirds
6 medium potatoes, peeled and quartered
1 large onion, quartered
3 teaspoons Montreal steak seasoning
1 carton (32 ounces) beef broth
3 tablespoons cornstarch
3 tablespoons water

  • In a large skillet over medium heat, brown roast in oil on all sides. Place carrots, potatoes and onion in a 6-qt. slow cooker. Place roast on top of vegetables; sprinkle with steak seasoning. I have made 3 things out of this book at the time being and every thing is very good. I will post more as I come by my favs. REMEMBER: That you should know your slow cooker. Slow cookers vary in cooking speed, hence the reason why there is a gap in cooking time. Enjoy.

3 -4 lbs cross-rib roasts or 3 -4 lbs rump roast, about
1 tablespoon vegetable oil
2 onions, thinly sliced
3 stalks celery, thinly sliced
3 large carrots, peeled and cut into 1/2 inch cubes
2 garlic cloves, minced
1 teaspoon dry mustard
1/2 teaspoon dried thyme leaves
1 teaspoon salt
1/4-1/2 teaspoon cracked black peppercorns
2 tablespoons flour
1 (10 3/4 ounce) can condensed tomato soup
1 (14 ounce) can condensed beef broth (undiluted)
1 tablespoon Worcestershire sauce
2 tablespoons packed brown sugar (optional)
2 tablespoons balsamic vinegar (optional) or 2 tablespoons red wine vinegar (optional)

Steps:

  • Pat roast dry with paper towel.
  • In a skillet, heat oil over medium-high heat.
  • Add roast and cook, turning, until brown on all sides, about 7 to 10 minutes.

1 Tbsp whole allspice

16 peppercorns

2 Tbsp tomato paste
2 tsp salt
1 tsp black pepper
4 lb beef chuck roast or rump roast
2 c red wine
2 c water (or more, if needed)

Steps:

  • 1. In a large stock pot, add the bacon and fry over medium-high heat just until crisp.
  • 2. Add the onion, bay leaves, allspice, cinnamon, cloves, peppercorns, garlic and tomato paste. Cook until onions are soft, about 10 minutes. Transfer the onion mixture to slow cooker.
  • 3. Season the roast with salt and pepper, then cut the roast into medium-sized cubes. Place the roast chunks on top of the onion mixture in the slow cooker.
