This recipe is a favorite originating from my Mother's large Italian family. It was her job growing up to clean, trim, and stuff the artichokes. My Mom taught me to make these when I was young. Someday when I have a daughter, I will teach her the same. From generation to generation, this recipe is a classic and continues to be a pleaser for all. My husband enjoys this recipe and appreciates the love behind it.

4 medium fresh artichokes
2 -3 cups Italian style breadcrumbs
2 -3 tablespoons of grated parmesan cheese or 2 -3 tablespoons romano cheese
1 tablespoon dried parsley
1 teaspoon garlic salt
1/2 teaspoon fresh ground black pepper
1/4 cup extra virgin olive oil
1 -2 tablespoon extra virgin olive oil (for drizzling)

Steps:

  • Rinse artichokes well, tugging leaves outward to loosen slightly for stuffing.
  • Trim off stems so artichokes sit on a flat surface.
  • Trim off the pointed tips of each leaf.
  • Set aside.
  • In a large bowl combine bread crumbs, cheese, parsley, garlic salt, and pepper.
  • Mix well; slowly add the oil till the crumb mixture is moistened enough to stick together.
  • You may need to adjust the amount of oil depending on the type and amount of bread crumbs used.
  • Stuff each leaf of the artichoke, starting from the bottom and working your way around, with crumb mixture.
  • Stuff desired amount of leaves and shake off excess mixture.
  • Continue this step with remaining artichokes.
  • Place artichokes in a large baking pan and fill bottom of pan with 1/2 to 1 inch of water.
  • Drizzle olive oil over top of stuffed artichokes and cover tightly with heavy duty foil.
  • Cook on 375 degrees for approximately 60-80 minutes (depending on size of artichoke) or until leave comes out easily.

8 teaspoons lemon juice
1 medium lemon, sliced
4 whole peppercorns
1 bay leaf
1 teaspoon salt, divided
4 cups cubed Italian bread (1/2-inch cubes)
1/2 cup minced fresh parsley
2 tablespoons grated Parmesan cheese
2 tablespoons plus 4 teaspoons olive oil, divided
2 teaspoons grated lemon zest
2 garlic cloves, minced
1/4 teaspoon pepper

Steps:

  • Using a sharp knife, level the bottom of each artichoke and cut 3/4 in. from the top. Using kitchen scissors, snip off the tips of the outer leaves; brush cut edges with lemon juice., Stand artichokes in a Dutch oven; add 2 in. of water. Add lemon slices, peppercorns, bay leaf and 1/2 teaspoon salt; bring to a boil. Reduce heat; cover and simmer 25-30 minutes or until tender and leaves near the center pull out easily. 4 large artichokes (trimmed and stems removed, see notes below)
2 tablespoons lemon juice
1/4 cup extra virgin olive oil
10 cloves garlic (grated)
2 cups plain breadcrumbs
1 1/2 teaspoons dried Sicilian oregano (or Italian oregano)
1/2 cup parsley (minced)
1 1/4 cups Pecorino Romano (grated)
2 tablespoons lemon zest
1/2 teaspoon crushed red pepper flakes
1/4 cup dry white wine
1/2 cup extra virgin olive oil
1 teaspoon kosher salt (plus more to taste)
2 1/2 cups water
1 1/2 cups dry white wine
2 cloves garlic (minced)
1 teaspoon kosher salt
4 tablespoons butter
3 tablespoons lemon juice
1/4 cup parsley (minced)
3 tablespoons seasoned breadcrumbs (optional, if there are extra breadcrumbs add no more than 3 tablespoons to the sauce.)

Steps:

  • Preheat oven to 400f and set the rack to the middle level.
  • Remove and shave the artichoke stem with a vegetable peeler. Trim the bottoms of the artichokes with a paring knife and cut off the top 1/3 of the artichoke. Using kitchen scissors trim any pointy leaves. Finally, scoop out the fuzzy interior of the artichoke heart but leave the bottom intact. After cutting each artichoke add immediately to a large pot of water with 2 tablespoons of lemon juice.
  • Next, combine all of the seasoned breadcrumb ingredients. Taste test and add salt and pepper to taste. Make sure to use enough salt.
  • Before stuffing the artichoke spread the leaves apart. You can even place them upside down and try to flatten them to spread the leaves out.
  • Begin stuffing the middle of the artichokes, then work your way to the outside. Try to get a bit of the stuffing into each layer of leaves. Don't overpack the artichokes. It's best to Place each filled artichoke into a large baking dish. Also, place the cleaned stems into the dish.
  • Place the sauce ingredients into the baking dish and stir together. If you have any extra seasoned breadcrumbs sprinkle them into the sauce (use only up to 3 tablespoons of extra breadcrumbs).
  • Drizzle 1 tablespoon of extra virgin olive onto each artichoke and spoon a few tablespoons of sauce onto each artichoke to moisten the breadcrumbs. Cover the dish very tightly with foil and bake for 50 minutes.
  • After 45 minutes remove the foil and continue to bake until tender (about 20-30 minutes longer). Test for doneness by pulling a leaf off. If it removes fairly easily the artichokes are finished cooking. If you like, you can broil the artichokes for the last 60-90 seconds to add more color to the breadcrumbs but watch very carefully!
  • *Optional* - You should have enough sauce in the baking dish, but if you want more simply remove the artichokes and pour the sauce into a saucepot. Add 1 cup of water and 1 cup of wine and bring to a boil for 2-3 minutes. Season with salt, pepper, and lemon juice and once satisfied with the taste turn off the heat and whisk in another 2 tablespoons of butter.
  • Serve the stuffed artichokes in a shallow bowl along with a ladle of the sauce. Spoon the sauce on top of the artichokes or dip the leaves right into it. Enjoy!

6 whole artichokes
3 slices Italian bread, cubed
1 clove garlic, minced
⅛ cup chopped fresh parsley
¼ cup grated Romano cheese
½ teaspoon dried oregano
5 tablespoons vegetable oil, divided
salt and pepper to taste

Steps:

  • Snip the pointed tips of artichoke leaves, and cut off the stems. Wash and drain. Holding artichoke firmly by base, firmly rap the top of it on a hard surface; this will open it so it can be stuffed.
  • In a medium bowl combine bread cubes, garlic, parsley, Romano cheese, oregano, 2 tablespoons vegetable oil, salt and pepper; mix well.
  • Press about 1/2 cup of stuffing into each artichoke. Tightly pack stuffed artichokes together in a large heavy saucepan or Dutch oven. Add enough water to reach half way up artichokes and add 3 tablespoons oil.
  • Bring to a boil over high heat; reduce heat to low and simmer, covered, for 1 hour, or until leaves pull out easily.

6 medium artichokes
5 cloves garlic, smashed
1/2 bunch fresh mint, picked and finely chopped
1/2 bunch fresh Italian parsley, picked and finely chopped
1 cup grated pecorino cheese
1 cup bread crumbs
1/2 teaspoon crushed red pepper
2 cups white wine
Extra-virgin olive oil
Salt

Steps:

  • Squeeze the lemons into a large bowl filled with water. Place the lemon halves in the water.
  • Cut off the pointy tops of the artichoke. Remove some of the tough outer leaves. Remove the stem of the artichoke and peel off the tough green outer layer and reserve in the lemon water.
  • Gently spread the leaves of the artichoke. Using a melon baller, scoop out the hairy choke in the center of the artichoke. When the arties are clean reserve them in the lemon water.
  • In a small bowl combine the garlic, herbs, pecorino, bread crumbs, and crushed red pepper. Finely chop the reserved artichoke stems and add them to the bowl. Slowly drizzle in olive oil until the mixture forms a paste. Season with salt.
  • Stuff the artichokes with the paste.
  • Place the artichokes, flat side down, in a saucepan large enough to accommodate them.
  • Add the wine to the saucepan and enough lemon water to come 3/4 way up the sides of the artichokes. Add the lemon halves to pan also. Drizzle generously with olive oil and season with salt.
  • Bring to a boil and reduce to a simmer. Simmer for 15 to 20 minutes, or until the base of the artichokes are tender when poked with a fork.

4 medium artichokes
1 lemon, cut in half
1 tablespoon olive oil
1 small onion, finely chopped (1/4 cup)
4 cloves garlic, finely chopped
2 tablespoons butter, melted
1/2 cup Progresso™ plain bread crumbs
1/2 cup grated Parmesan cheese
1/2 teaspoon dried oregano leaves
1/2 teaspoon dried basil leaves

Steps:

  • Remove any discolored leaves from artichokes; trim stems even with base. Cutting straight across, cut 1 inch from tops and discard tops. With kitchen scissors, cut tips off leaves. Rinse artichokes with cold water.
  • Place steamer basket in 1/2 inch water in large saucepan or Dutch oven (water should not touch bottom of basket). Place artichokes in steamer basket. Squeeze lemon over artichokes and add lemon halves to basket. Cover tightly; heat to boiling. Reduce heat to low; steam about 30 minutes or until bottoms are tender when pierced with fork. Remove artichokes from basket; cool 15 minutes.
  • Heat oven to 400°F. In small skillet, heat oil over medium heat. Cook onion and garlic in oil, stirring frequently, until tender. In small bowl, stir together onion mixture, butter, bread crumbs, cheese, oregano and basil until well blended.
  • Remove center leaves and choke from each artichoke. Spoon filling into center of artichoke and a few of the side leaves. Place on cookie sheet.
  • Bake 15 to 20 minutes or until golden brown. Cool 5 minutes before serving.

Juice of 2 large lemons
3/4 cup olive oil
3 cloves garlic, minced
1 small onion, finely chopped
2 cups fresh white bread crumbs
4 teaspoons red wine vinegar (preferably Balsamic)
1 tablespoon fresh mint leafs, chopped
3 tablespoons parsley leaves, chopped
Coarse salt and freshly ground pepper to taste

Steps:

  • Preheat oven to 350 degrees.
  • Cut the stalks off the artichokes. Trim the outer leaves and slice an inch off the top. With a pair of scissors, trim the remaining tips from the leaves. When you have prepared the artichokes, put them in water to cover with the juice of one of the lemons so that they do not turn brown.
  • Cook the artichokes in salted boiling water for 10 minutes. Drain them upside down in a collander and remove the bristly choke.

1 lemon, halved
6 whole artichokes
3/4 cup fresh breadcrumbs
1/2 cup grated Pecorino Romano cheese
1 small garlic clove, minced
2 tablespoons chopped fresh parsley leaves
Freshly ground black pepper

Steps:

  • Squeeze the lemon halves into a large bowl and fill the bowl with cold water. Trim the bottom off each artichoke. Trim off the tough outer leaves. Snip the thorny tips off the top leaves. As each one is completed, place it in the lemon water to prevent it from discoloring.
  • In a small bowl, combine the breadcrumbs, cheese, garlic, and parsley and season with pepper. Pull each leaf open slightly from each artichoke and stuff a little filling into the opening. Place the artichokes snugly side by side in a large pan with a tight-fitting lid. Add 1 inch of water to the pot. Cover, bring to a boil, then reduce the heat and steam until the bottoms of the artichokes are tender, 35 to 45 minutes; a knife should insert easily. Make sure the water doesn't boil dry.   • Trim artichoke (Starting at the bottom, grasp leaves, bending backwards and snap off) up about 1 inch up from base.
  • Snip sharp points off remaining leaves.
  • Use Serrated knife to take off top- giving artichoke a"flat top".
  • Trim stem off at the bottom.
  • After trimming, place artichokes in acidulated water.
  • Steam artichokes with lemon juice and water (I use about 4 lemons juiced) for 20 minutes.
  • While chokes are steaming, mix bread crumbs, cheese, basil, garlic and 1/2 cup of the olive oil.
  • Remove'chokes from steamer, turning upside down to drain Using a towel grab choke and with"flat top" side down press down smartly on the counter to"open up" choke.
  • Then take bread crumb mixture and stuff between the leaves.
  • Place chokes in heavy pot,stem side down, adding about 1/2 cup of bread crumb mixture to the bottom of the pot Add 2 inches of water Pour olive oil over each choke.
  • Cover and steam over low or bake at 325 oven for 45 minutes, until leaves come out easily.
  • After removing chokes to serve, reduce remaining liquid slightly- the bread crumbs will make it thicken.

Lemon juice
2 cups bread crumbs, preferably fresh and fairly coarse
1 tablespoon minced garlic
5 anchovy fillets, chopped
1/2 cup grated Parmesan
1/3 to 1/2 cup chopped parsley
Extra virgin olive oil

Steps:

  • Trim artichokes, snap off hard outside leaves, cut off top inch or so of pointy tips and cut off stem so that it is just about flush with base of leaves. Put stem end down and press on open end to force leaves open. Use your hands to expand that opening, then use a spoon to scrape out choke. As you finish with each artichoke, sprinkle it with lemon juice and set aside.
  • In a bowl, combine bread crumbs with remaining ingredients, including enough olive oil to moisten mixture. Stuff a portion of this into cavity of each artichoke, spreading some between leaves as well.

  • Preheat the oven to 350°F (180°C).
