Yield 4 people

Number Of Ingredients 5

4 large sweet potatoes
1 stick butter
½ cup brown sugar
1 Tsp. Cinnamon
½ cup crushed Madagascar Vanilla SweetSticks

Steps:

  • 1. Preheat oven to 350 degrees 2. Clean, peel and cut sweet potatoes into small chunks 3. Boil sweet potatoes for about 10 minutes or until soft 4. Drain sweet potatoes and place in an oven safe dish 5. In a small bowl melt the butter until it is a liquid 6. Drizzle butter over the sweet potatoes and add the remaining ingredients to the top of the dish 7. Cook for 10- 15 minutes or until the top is caramelized

Tips:

  • Choose the right sweet potatoes: Look for firm, unblemished sweet potatoes with smooth skin. Avoid any that are soft or have bruises or cuts.
  • Cook the sweet potatoes thoroughly: This ensures that they are soft and easy to mash. You can bake them, microwave them, or boil them until they are fork-tender.
  • Use a ricer or food mill to mash the sweet potatoes: This will give you a smooth and creamy texture. If you don't have a ricer or food mill, you can use a potato masher, but be sure to mash the potatoes until they are very smooth.
  • Don't overmix the casserole: Overmixing can make the casserole tough. Mix the ingredients just until they are combined.
  • Bake the casserole until it is bubbly and golden brown: This usually takes about 30 minutes. Serve the casserole immediately, or let it cool slightly before serving.

Conclusion:
