Time 20m

Yield 2 servings

Number Of Ingredients 9

1 tablespoon unsweetened cocoa powder
1/2 cup hot espresso or strong brewed coffee
1 tablespoon rum
2 teaspoons granulated sugar
1/3 cup mascarpone cheese
1/2 cup heavy whipping cream
2 tablespoons confectioners' sugar
1/2 teaspoon pure vanilla extract
6 lady fingers (each cookie measuring about 4 1/2 by 1 inch)

Steps:

  • Sift about 1/3 of the cocoa powder into the serving glasses, dividing it equally between the two.
  • Combine the espresso, rum and granulated sugar in a small, wide bowl and stir until the sugar dissolves. (Make sure your espresso is hot, which will help the sugar dissolve.)
  • Beat the mascarpone cheese, heavy cream, confectioners' sugar and vanilla together in a large bowl until soft peaks form. Set the mascarpone cream aside.
  • Break a lady finger in half so that the two halves will fit snugly into your serving glass. Dip both sides of the halves into the espresso mixture. (Don't linger in the espresso-the delicate lady fingers will disintegrate!)
  • Place the lady finger pieces, hump-side up, in a layer in the serving glass. About two halves will fit in each layer. Top with about 2 tablespoons of the mascarpone cream and spread in an even layer. Sift in half of the remaining cocoa powder. Repeat the dipping and layering of the lady fingers and dolloping with the mascarpone cream until you reach the top of the serving glasses, finishing with the cream.
  • Dust the remaining cocoa powder on top of each glass in an even layer. Refrigerate until ready to enjoy and serve chilled.

Provided by Tikeyah Whittle

Categories     Desserts

Time 2h15m

Yield 2 servings

Number Of Ingredients 8

2 tablespoons granulated sugar
2 large pastured egg yollks, room temperature
8 oz mascarpone cheese
2 tablespoons caramel sauce, prepared, plus more for drizzling
9 ladyfingers, italian
½ cup espresso, strong brewed, cooled
whipped cream, for serving
flaky sea salt, for serving

Steps:

  • Add the sugar and egg yolks in a small bowl and whisk vigorously until the mixture thickens and falls back on itself in a ribbon when the whisk is lifted, 6-8 minutes. Fold in the mascarpone and caramel sauce to combine evenly.
  • Break each ladyfinger in half crosswise. Dunk each half briefly in the espresso and arrange 3 halves, side by side, in the bottom of each of two cocktail glasses. Continue layering the ladyfinger halves and the caramel-mascarpone mixture to make 3 layers. Discard any remaining espresso. Cover the glasses with plastic wrap and refrigerate for at least 2 hours, and up to 24 hours (the longer it sits, the better it gets).

EASY TIRAMISU

Easy Tiramisu image

Both make-ahead and no-bake, this Italian treat will lift everyone's mood-including the chef's! Grab an Americano at a coffee shop to infuse the store-bought ladyfingers with freshly brewed flavor. Then, after layering the newly caffeinated cookies with marsala-spiked mascarpone, pop it in the fridge for an overnight chill that will set you up for slicing success. All that is left is a final dusting of cocoa powder before serving and you'll be all set to end the evening on a high note.

Categories     Food & Cooking     Dessert & Treats Recipes

Time 8h35m

Number Of Ingredients 8

1 1/2 cups Americano or strong coffee, room temperature
3 large eggs
1/2 cup sugar
1/3 cup sweet Marsala
1/2 cup heavy cream
8 ounces mascarpone
1 7-ounce package ladyfingers (about 24)
Unsweetened cocoa powder, for sprinkling

Steps:

  • Pour coffee into a pie dish. Combine eggs, sugar, and Marsala in a large metal bowl set on top of (but not in) a pot of simmering water. Beat with a hand mixer or whisk until mixture doubles in volume and reaches 160°F on a thermometer, 7 to 10 minutes.
  • Remove bowl from heat and let cool slightly. Meanwhile, in another bowl, whisk cream to form peaks. Gently whisk mascarpone into egg mixture, then fold in whipped cream.
  • Working one at a time, dip half of ladyfingers in coffee, about 1 second per side, and arrange in the bottom of a 9-by-9-inch baking dish; fit them snugly side by side to line dish. Evenly spread half of mascarpone mixture over ladyfingers. Dip remaining half of ladyfingers in coffee and repeat layering with cookies and mascarpone mixture.
  • Sift a layer of cocoa over top so it infuses cream. Wrap dish with plastic and refrigerate at least 9 hours and up to 1 day. To serve, sift another layer of cocoa over top and cut into squares.

Tips:

  • For a classic tiramisu flavor, use a good quality espresso. If you don't have an espresso machine, you can use strong brewed coffee instead.
  • Use fresh mascarpone cheese for the best results. If you can't find mascarpone cheese, you can substitute cream cheese, but the flavor will be slightly different.
  • Make sure the eggs are at room temperature before you start making the filling. This will help them incorporate better into the mixture.
  • Don't overbeat the filling. You want it to be light and fluffy, not dense and heavy.
  • Use ladyfingers that are fresh and not too dry. If they are too dry, they will absorb too much of the coffee mixture and become soggy.
  • Dip the ladyfingers in the coffee mixture quickly, so that they don't absorb too much liquid.
  • Layer the ladyfingers and filling in a single layer, rather than stacking them on top of each other. This will help to prevent the tiramisu from becoming too dense.
  • Cover the tiramisu with plastic wrap and refrigerate it for at least 4 hours, or overnight. This will allow the flavors to meld together and the tiramisu to set.

Conclusion:

Tiramisu is a delicious and easy-to-make dessert that is perfect for any occasion. With just a few simple ingredients, you can create a classic Italian dessert that will impress your friends and family. So next time you're looking for a sweet treat, give this easy tiramisu recipe a try.
