EASY MEATBALL TORTELLINI SOUP
Delicious soup that is a family favorite. Found it in the newspaper a few years ago. Usually use Progresso Italian bread crumbs. For color I grate one or two carrots into the pot when I pour in the broth. Servings are main-course servings.

Tips:
- Use high-quality ingredients: Fresh, flavorful ingredients will make your soup taste better. Look for high-quality ground beef, chicken, or turkey, and use fresh vegetables and herbs.
- Brown the meatballs before adding them to the soup: This will help them hold their shape and develop a rich flavor.
- Don't overcook the tortellini: Tortellini should be cooked until they are al dente, or slightly firm to the bite. Overcooked tortellini will become mushy.
- Add vegetables to the soup: Vegetables add flavor, nutrients, and color to the soup. Some good choices include carrots, celery, onions, and spinach.
- Season the soup to taste: Add salt, pepper, and other seasonings to taste. You can also add a squeeze of lemon juice or a dollop of sour cream for extra flavor.
