This is a really easy vegetarian casserole with tomatoes, Parmesan cheese, sour cream, and eggs. Eat as a side or as a vegetarian main with salad.

¼ cup butter
⅓ cup onion, chopped
2 tablespoons finely chopped flat-leaf parsley
1 ¾ pounds tomatoes, sliced
salt to taste
1 ¼ cups grated Parmesan cheese, divided
9 ounces sour cream
2 eggs

Steps:

  • Melt butter in a skillet over medium-low heat and cook onion and parsley until soft, about 5 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease a casserole dish with butter.
  • Spread out tomato slices in one layer in the casserole dish and season with salt. Distribute 1/2 of the onion mixture and 1/2 of the Parmesan cheese on top. Layer another row of tomato slices, season with salt, and sprinkle with remaining 1/2 of the onions. Finish with the final layer of tomatoes and season with salt.
  • Whisk together sour cream, eggs, and salt and spread over tomatoes. Sprinkle with remaining Parmesan cheese.
  • Bake in the preheated oven until set and lightly browned, about 30 minutes.

This is my family's favorite vegetarian pasta bake with lots of tomatoes, cheese, and cream that we make regularly in my house. Kids, hubby, everyone loves it.

1 (16 ounce) box penne pasta
¼ cup olive oil, divided
3 cloves garlic, minced
4 ripe tomatoes, chopped
1 ¾ cups shredded mozzarella cheese, divided
1 cup heavy whipping cream
7 ounces tomato paste
½ cup sour cream
1 ripe tomato, sliced
1 tablespoon Italian seasoning, or to taste
salt and freshly ground pepper to taste
9 tablespoons grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • Preheat oven to 400 degrees F (200 degrees C). Grease a large baking dish.
  • Heat 1 tablespoon olive oil in a skillet over medium heat and cook garlic until fragrant, about 1 minute.
  • Combine chopped tomatoes, 3/4 cup mozzarella cheese, heavy cream, tomato paste, sour cream, remaining 3 tablespoons olive oil, and cooked garlic in a large bowl and season with Italian herbs, salt, and pepper. Mix in penne pasta and spread into the prepared baking dish. Cover with sliced tomatoes and sprinkle with remaining 1 cup mozzarella cheese, and Parmesan cheese.
  • Bake in the preheated oven until cheese is melted, about 30 minutes.
