BROCCOLI RICE QUICHE

Broccoli Rice Quiche image

A light, healthy anytime meal. I like to make this for Christmas brunch, it's just perfect to hold over hungry guests till dinner is ready.

Provided by Cynthia R.

Categories     < 60 Mins

Time 1h

Yield 1 9" Deep Dish Pie, 4-8 serving(s)

Number Of Ingredients 6

2 cups cooked brown rice
14 ounces cooked chopped broccoli
4 eggs
8 ounces grated cheddar cheese (Swiss cheese is a great substitution, especially for low sodium diets)
2/3 cup whole milk
1 (4 ounce) can mushroom stems and pieces, drained

Steps:

  • Preheat oven to 375 degrees.
  • Generously grease a 9" deep dish pie plate.
  • Combine the rice, 1/2 the cheese, and 1 egg and press into bottom of pie plate.
  • Beat remaining eggs; add salt and pepper to taste, (cooled slightly) broccoli, mushrooms, and milk. Pour over rice mixture in pie dish.
  • Bake at 375 degrees for 20-25 minutes, until set and starting to brown.
  • Remove pie from oven, sprinkle remaining cheese over all. Return to oven and bake 10 minutes longer. (Until cheese melted, and center of pie is firmly set.).
  • Serve with Salsa and sour cream or hollandaise sauce on the side.

Tips:

  • To make a flaky quiche crust, use a combination of all-purpose flour and butter. Grating the butter into the flour helps create a more even distribution of fat, which results in a more tender crust.
  • Blind baking the quiche crust before filling it helps prevent the crust from becoming soggy. To blind bake the crust, preheat the oven to 350°F (175°C) and bake the crust for 10-12 minutes, or until it is golden brown.
  • When making the quiche filling, use a combination of eggs, milk, and cream. This will create a rich and creamy filling.
  • To add flavor to the quiche filling, add your favorite herbs, spices, and vegetables. Some popular additions include chives, thyme, rosemary, garlic, onions, and mushrooms.
  • When baking the quiche, place it in a preheated oven. This will help the quiche cook evenly.
  • The quiche is done baking when the center is set and a knife inserted into the center comes out clean.

Conclusion:

Wild rice quiche is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It is also a great way to use up leftover wild rice. With its flaky crust, creamy filling, and flavorful toppings, wild rice quiche is sure to be a hit with everyone who tries it.
