2 cups shelled edamame
½ cup roughly chopped cilantro
⅓ cup tahini
¼ cup lemon juice
1 teaspoon salt
1 teaspoon smoked paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Trim about 1/4 inch off the top of the garlic bulb, to expose the cloves; drizzle with 1 tablespoon olive oil and wrap in aluminum foil.
  • Bake in the preheated oven until soft, about 1 hour. Let cool until easily handled, about 10 minutes.

1 (16 ounce) package frozen shelled edamame (green soybeans)
5 tablespoons cashews, or more to taste
3 teaspoons salt, or as needed
1 cup green garlic (garlic scapes), cut into pieces
1 teaspoon coriander
1 teaspoon black pepper
1 small lemon, finely zested and juiced
¾ cup extra-virgin olive oil, or more as needed

Steps:

  • Bring 6 cups of water to a boil in a saucepan. Add edamame and cook until soft, 4 to 5 minutes. Drain and refrigerate for 10 minutes.
  • Combine cashews and 1/8 teaspoon salt in the bowl of a food processor. Pulse until blended, scraping sides multiple times until mixture has a firm, dough-like consistency. Kosher salt
2 10-ounce packages frozen peas
1/2 cup fresh lemon juice
2 teaspoons minced garlic
1/2 teaspoon ground coriander
1/4 teaspoon ground cumin
3/4 cup extra-virgin olive oil plus more for drizzling
1/4 cup chopped fresh cilantro plus more for garnish
1/4 cup chopped fresh mint plus more for garnish
Freshly ground black pepper
Endive spears

Steps:

  • Cook edamame in a large pot of boiling salted water until tender, 3-5 minutes. Using a slotted spoon, transfer to a large bowl of ice water. Return water in pot to a boil and add peas; cook until heated through, about 1 minute. Transfer peas to bowl with edamame; let cool. Drain well.

  • Steam edamame in a basket insert set over a pan of simmering water until tender, 8 to 10 minutes. Let cool completely.

Like in hummus with chickpeas, I always add a little homemade harissa, which gives it great flavor without making it spicy. It's not worth turning on the oven for just one head of garlic so I always roast 3 or 4 heads at a time and use them within a week or so. This hummus keeps for 3 to 4 days, refrigerated.
