Tips for Making Authentic Colombian Egg and Coriander Soup (Changua):

  • Use fresh, high-quality ingredients. This will make a big difference in the flavor of your soup. For the best results, use fresh eggs, fresh cilantro, and fresh green onions.
  • Don't overcook the eggs. The eggs should be cooked until they are just set, but not hard-boiled. If you overcook them, they will become tough and rubbery.
  • Use a good quality broth. The broth is the base of your soup, so it's important to use a good quality one. You can use chicken broth, beef broth, or vegetable broth, depending on your preference.
  • Season the soup to taste. Add salt, pepper, and cumin to taste. You can also add other spices, such as garlic powder, onion powder, or paprika, if desired.
  • Serve the soup immediately. Changua is best served hot, so make sure to serve it as soon as it's done cooking.

Conclusion:

Colombian egg and coriander soup (changua) is a delicious and hearty soup that is perfect for a cold day. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a warm and comforting soup, give changua a try!
