I got bored one day and wanted quiche, the yummy texture from the crust, so i wanted it to be low cal so i made it with egg beaters!!! Very yummy!

1 1/2 cups southwestern style Egg Beaters egg substitute
1/4 cup mushroom, sliced
1/4 cup tomatoes, sliced
4 shrimp, cut up
1 frozen pie shell
1/2 cup shredded cheddar cheese

I have been on a permanent quest to find the perfect quiche recipe. As a self-professed breakfast food, cheese, and egg lover, quiche represents to me all that is right and good in a culinary concoction. Traditionally quiche is not a healthy option, what with all the cream and cheese that typically goes into it. I have literally experimented with different versions of a healthier quiche for years, but a couple of weeks ago I stumbled upon the perfect mixture, and I am pleased to share it here with all of you.

1 prepared 9-inch single pie crust
1 tablespoon olive oil
4 green onions, chopped
½ pound cooked ham, cubed
1 cup fat-free egg substitute
7 fluid ounces fat-free evaporated milk
¼ cup shredded part-skim mozzarella cheese
1 tablespoon grated Parmesan cheese
1 teaspoon chopped fresh chives

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Unroll pie crust and press into an 8-inch pie dish.
  • Heat olive oil in a skillet over medium heat; cook and stir green onions until wilted and beginning to brown, 2 to 3 minutes. Remove from heat. Spread ham over prepared pie crust and top with green onions.
  • Whisk egg substitute, evaporated milk, and mozzarella cheese in a bowl. Pour over ham mixture. Sprinkle with Parmesan cheese and garnish with chives.
  • Bake in preheated oven for 20 minutes. Increase heat to 350 degrees F (175 degrees C) and continue baking until quiche is browned, 15 to 20 minutes. Remove from oven and allow quiche to rest until eggs are set, about 30 minutes more.

1 1/2 cups mushrooms, sliced
3/4 cup low-fat cheddar cheese
2 1/2 cups chopped fresh spinach
2 green onions, chopped
1 1/2 cups Egg Beaters egg substitute
salt and pepper

Steps:

  • Chop and slice the veggies.
  • Grate the cheese Combine all the ingredients in a bowl and stir.
  • Spray an 8" round cake pan with cooking spray.
  • Pour the quiche in the cake pan.
  • Put in a preheated 350º oven and bake for 20-25 minutes.
  • Quiche is done when a toothpick inserted in the center comes out clean.
  • Enjoy!
