2 eggs
salt and ground black pepper to taste
1 pinch cayenne pepper
¼ cup crumbled cooked bacon

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place each avocado half in a ramekin. Crack 1 egg into each avocado half; season with salt, black pepper, and cayenne pepper. Place ramekins on a baking sheet.

1 avocado
4 slices of bread
4 tbsp. butter, divided
4 eggs
kosher salt
Freshly ground black pepper
1/2 c. shredded sharp Cheddar cheese
1 tbsp. Chopped chives

Steps:

  • Cut avocado in half and scoop out flesh as one big piece. Lay the avocado half on its side (the hole should be on its side) and cut in 3-4 large pieces, keeping the shape of the hole in each slice.
  • Cut a hole in the center of each slice of bread big enough to fit an avocado slice. Melt 2 tablespoons of butter in a large nonstick skillet over medium heat. Add 2 slices of bread to the skillet and toast on each side, about 2 minutes per side. Place avocado slices inside each slice of bread in skillet. Crack an egg into the center of each circle. Season with salt and pepper. Cover skillet and cook until the egg is cooked to your desired doneness, about 3-5 minutes. Sprinkle cheese on top of each slice, cover with lid again and cook until the cheese is melted. Repeat with remaining ingredients. Garnish with chives.

2 bagels, halved
2 tbsp ( 30 mL ) butter
1 avocado, sliced
4 eggs
Pinch salt
Pinch pepper
2 cheddar slices (or cheese of choice)

Steps:

  • Cut a larger opening into the center of each bagel half using a cookie cutter or small glass.
  • Add 2 tbsp butter to a skillet, heat over medium-high. Once melted, place the bagel halves in the pan, cut side down. Cook till browned, about 2-3 minutes.Flip bagel halves and arrange sliced avocado on each, but not overtop of the hole. Pour one egg into each opening, season with salt and pepper, and cover 2 of the 4 bagel halves with a cheese slice (you can break up the cheese slice to avoid covering the egg completely). Cover pan and cook until whites and yolks are cooked to your liking, approximately 4 to 6 minutes.
  • Put the top and bottom halves together, transfer to a plate and enjoy! Or, wrap it in foil or parchment paper and take it on the go!

Steps:

  • Heat a non-stick skillet to medium low heat.
  • Lightly spray with oil.
  • Slice an avocado with the skin ON lengthwise, forming 1 or 2 thick slice in the middle.
  • You will have some leftover avocado pieces - so, Make some bonus guacamole if you want! Guacamole for Breakfast? Why NOT?.
  • Remove the seed and use a small cookie cutter to make a hole in the center of your thick slice big enough for your egg.

5 large eggs
1/3 cup whole milk

2 wide slices sturdy country white bread, such as sourdough or peasant bread (preferably from the middle of the loaf)
8 ounces asparagus, trimmed
3 scallions, thinly sliced
3 fresh thyme sprigs
1 tablespoon extra-virgin olive oil

  • Heat oven to 425 degrees. Grease a rimmed sheet pan with 1 tablespoon melted butter.
  • In a large, shallow dish, whisk together 1 egg, milk, 1/4 cup Parmesan, a large pinch of salt and pepper, and the remaining tablespoon melted butter. Add bread and let soak for about 2 minutes per side. The bread should be soft and soaked through, but not falling apart.
  • Arrange soaked bread on one side of the prepared sheet pan. Pour any remaining soaking mixture from bowl onto the bread slices.   • Bake until bread is golden on top, 10 minutes. If the asparagus is tender and browned after 10 minutes, use tongs to transfer the stalks to a plate and tent with foil to keep warm. Thick asparagus may need more time, in which case leave it in the pan for the next step.
  • Using a spatula, flip the bread slices and cut-outs. Crack the remaining 4 eggs into the holes (the eggs may overflow a bit, and that is OK). Season eggs lightly with salt and pepper. Sprinkle remaining 2 tablespoons Parmesan on top of eggs and bread.
  • Return pan to the oven and bake until eggs are barely set, about 5 to 7 minutes. The yolks and even some of the whites should jiggle slightly.
