CHEF JOHN'S SPAGHETTI ALLA CARBONARA
Spaghetti alla carbonara's creamy sauce is simply a thin egg and cheese custard, spiked with pork and black pepper. Try to find pancetta or guanciale (pork cheek cured like pancetta) for a really authentic taste!

EGG-FREE SPAGHETTI CARBONARA
This is lighter than some carbonaras, and still very creamy. My husband and I aren't very fond of cooked eggs in any form, so combined several different recipes and a bit of my own ingredients to make this tasty recipe. Feel free to substitute chicken broth for the white wine, if you'd like. I served this with a side of steamed broccoli.

Tips:
- To ensure a rich and creamy sauce, use high-quality Parmesan cheese. Freshly grated Parmesan will yield the best flavor.
- Use thick-cut spaghetti or bucatini pasta for a more authentic carbonara experience.
- Cook the pasta al dente, as it will continue to cook in the sauce.
- Reserve some of the pasta cooking water to add to the sauce if needed. This will help to emulsify the sauce and make it creamy.
- Don't overcrowd the pan when cooking the pancetta or bacon. This will prevent it from crisping properly.
- Add the beaten eggs and cheese mixture to the pasta and pancetta mixture slowly, while stirring constantly. This will help to prevent the eggs from scrambling.
- Serve the carbonara immediately, topped with additional Parmesan cheese and black pepper.
