6 ounces day-old French bread, cut into 3/4-inch cubes
1/2 cup dried tart cherry
4 large eggs
1/4 cup dark rum (optional)
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 quart prepared eggnog
1 cup vanilla ice cream

Steps:

  • Grease a shallow 2-quart casserole dish. Place bread in casserole; sprinkle with cherries.
  • In a medium bowl, mix eggs until well beaten. Add rum, if using, cinnamon, and salt, whisking until blended. Stir in eggnog. Pour eggnog mixture over bread, pressing bread into custard.
  • Cover and refrigerate bread mixture for 30 minutes or overnight to allow bread to absorb custard, stirring once.
  • Preheat oven to 350 degrees. Bake bread pudding, uncovered, 50 to 55 minutes or until center is almost set. Cool in pan on wire rack for 15 minutes.
  • Just before serving, place ice cream in small microwaveable serving bowl; heat in microwave oven on High 30-35 seconds, stirring once. Remove bowl from microwave and stir until smooth, but still thick and cool.

5 large eggs
5 tablespoons packed dark brown sugar
1 cup heavy cream
1 cup whole milk
2 tablespoons brandy
Finely grated zest of 1/4 orange
Seeds of 1/2 vanilla bean
1/4 teaspoon fine sea salt
5 tablespoons granulated sugar
6 slices soft white bread, cut into 1/2-inch cubes
1/2 cup (about 3 ounces) milk chocolate chips
1/2 cup dried cherries
Nonstick cooking spray
1 tablespoon Turbinado sugar

Steps:

  • Put the dark chocolate chips in a large heatproof bowl. In another large bowl, whisk together the eggs and brown sugar until well combined.
  • In a medium saucepan, bring the cream, milk, brandy, orange zest, vanilla seeds, salt, and granulated sugar to a boil; stir until the sugar is dissolved. Pour the hot liquid over the dark chocolate chips and whisk until melted and smooth. While whisking constantly, pour the dark chocolate mixture into the eggs, mixing until combined. Add the bread and toss gently to coat. Transfer the bread mixture to the refrigerator and cool to room temperature. Stir in the chocolate chips and dried cherries. Cover and refrigerate overnight.

2 cups whole milk
1 1/4 cups sugar
8 large eggs
1/4 cup dark rum

Purchased caramel sauce, heated

Steps:

  • Preheat oven to 400°F. Using 3-inch-diameter round cookie cutter, cut round from each bread slice and arrange on baking sheet. Toast bread rounds in oven until golden brown, about 5 minutes. Reduce oven temperature to 350°F.
  • Bring cream, milk, and sugar to simmer in heavy large saucepan, stirring to dissolve sugar. Whisk eggs in large bowl to blend. Gradually whisk hot cream mixture into eggs. Whisk in rum and vanilla.
  • Butter eight 1 1/4-cup soufflé dishes; arrange on rimmed baking sheet. Place 1 bread round in bottom of each dish. Top each with 1 heaping tablespoon dried cherries. Top cherries in each dish with another bread round. Top each with another heaping tablespoon dried cherries. Top cherries in each dish with third bread slice.   • Bake bread puddings until tops are puffed and brown, about 35 minutes. Remove from oven; cool 10 minutes. Serve warm with caramel sauce.

1 cup low-fat milk (2 percent)
1 teaspoon vanilla extract
Softened butter for the baking dish
3 eggs, separated
50 grams (1/2 cup) almond flour
1/2 teaspoon cinnamon
2 tablespoons mild honey, like clover
1/4 cup sugar
3/4 pound cherries, pitted
2 tablespoons sliced almonds, lightly toasted

Steps:

  • Cut the bread into 3/4-inch squares. Combine the milk and vanilla and toss with the bread in a medium bowl. Cover and refrigerate for 2 hours or longer.
