I love making Spritz Cookies because they are super easy and once you get going you really can make a lot of them at once. Well, most recently I have started trying more flavored Spritz cookies. When I saw this one for Eggnog it was for sure to be on the list. I hope you enjoy.

EGGNOG SPRITZ COOKIES
1 c powdered sugar
1 c butter, softened
1 tsp rum extract
1 medium egg
2 1/3 c all-purpose flour
1/4 tsp freshly grated nutmeg
1/4 tsp salt
RUM GLAZE
2 Tbsp butter, melted
1 - 1/2 c powdered sugar
1 tsp spicy rum or rum extract
1 Tbsp eggnog
1/2 tsp freshly grated nutmeg

Steps:

  • 1. Heat oven to 400 F. In large bowl, beat powdered sugar, butter, rum extract and egg until light and fluffy. Beat in flour, nutmeg and salt until well blended.
  • 2. Fit cookie press with desired template. Fill cookie press; press dough onto ungreased cookie sheets.
  • 3. Bake 5 to 7 minutes or until edges are firm but not brown. Immediately remove from cookie sheets. Let cookies cool before you glaze them.
  • 4. For glaze: Stir all the glaze ingredients together until smooth and thin enough to drizzle. Drizzle on cookies. I usually use my cake decorator but you can put it in a plastic baggie and cut off a corner and squeeze it out or just drizzle with a knife all crazy like. Before glaze is set, sprinkle with nutmeg. Instead of grated nutmeg you can add colored sprinkles for the festive occasion.

EGGNOG SPRITZ

Categories     Cookies     Dessert     Bake     Christmas     Quick & Easy     Nutmeg

Number Of Ingredients 12

2/3 cup sugar
1 cup butter -- softened
1 egg
1/2 teaspoon salt
1 teaspoon ground nutmeg
2 teaspoons vanilla
2 1/4 cups all-purpose flour
For Glaze
1 cup powdered sugar
1/4 cup butter -- softened
2 tablespoons water
1/4 teaspoon rum extract

Steps:

  • Heat oven to 400F. In large mixer bowl combine sugar, butter, egg, salt, spices, and vanilla. Beat at medium speed, scraping bowl often, until mixture is light and fluffy, 2 to 3 minutes. Add flour. Beat at low speed, scraping bowl often, until well mixed, 2 to 3 minutes. Cover and refrigerate until firm enough to form cookies, 30 to 45 minutes. Place dough in cookie press. Form desired shapes 1 inch apart on cookie sheets. Bake for 6 to 8 minutes or until edges are lightly browned. For Glaze, in small bowl stir together powdered sugar, butter, water, and rum extract until smooth. Drizzle or pipe over warm cookies.

Tips and Conclusion

Tips:

  • Make sure all ingredients are cold before starting. This will help the dough come together more easily and prevent the cookies from spreading in the oven.
  • Do not overmix the dough. Overmixing will make the cookies tough.
  • Chill the dough for at least 30 minutes before baking. This will help the cookies hold their shape in the oven.
  • Spritz the cookies evenly onto the prepared baking sheet. If the cookies are too close together, they will spread and become misshapen.
  • Bake the cookies until they are just set. Overbaking will make the cookies dry and crumbly.
  • Let the cookies cool completely on the baking sheet before transferring them to a wire rack to cool completely.

Conclusion:

Eggnog spritz cookies are a delightful holiday treat that is sure to please everyone. They are easy to make and can be decorated in a variety of ways. Whether you are looking for a classic holiday cookie or something new and festive, eggnog spritz cookies are a great choice.
