- In a medium bowl, combine cornstarch and 1/2 cup milk with fingers until smooth. Stir in cake flour and half the sugar. Beat in egg yolks. Set aside.
- In a saucepan over medium heat, bring remaining milk and remaining sugar to a rolling boil. Stir in egg yolk mixture; continue stirring and bring to a boil again. Remove from heat and stir in butter and vanilla. Let cool.
- In a small saucepan or in the microwave, heat the jam until runny.

- Arrange the eggplant slices on two sheet pans, sprinkle with salt, and set aside for 30 minutes or until they begin to sweat. Using a paper towel, pat the slices dry and set aside.
- In a large bowl, whisk together the pesto, olive oil, garlic and lemon juice. Toss in the eggplant to coat and let marinate at room temperature for at least 1 hour or overnight in the refrigerator.
- Dump the flour onto a shallow rimmed plate. In a medium bowl, whisk together the egg whites and 1 cup of water. Combine the panko, Parmigiano-Reggiano, parsley and pepper on a second shallow rimmed plate.
- Spread a sheet of waxed paper on a clean work surface. Working with one slice of eggplant at a time, dredge it in the flour first, shaking off the excess, and then dip it in the egg mixture followed by the breadcrumbs. Gently press the breadcrumbs onto both sides of the eggplant and place on the waxed paper. Repeat with the remaining eggplant slices.
- Pour at least 2 inches of corn oil into a small, deep pot. Heat the oil over high until hot but not smoking. Working in batches, fry the eggplant slices until golden, turning once, 3 to 5 minutes. Do not crowd the pot. Using a slotted spoon, transfer the eggplant slices to a paper towel-lined platter to drain.
- Place an eggplant slice on a small plate. Spread with 2 tablespoons of the baba ghanouj, top with a second eggplant slice and spread 1 tablespoon of baba ghanouj on top. Repeat layering in this order with the remaining eggplant slices and baba ghanouj to make eight to ten eggplant stacks.
- Just before serving, toss together the salad: In a medium bowl, combine the tomatoes and onion. In a small bowl, whisk together the pesto, lemon juice, olive oil and salt. Drizzle just enough of the pesto mixture over the tomato-onion mixture to thoroughly coat. INDIAN LAMB-AND-EGGPLANT NAPOLEON

- Dice the eggplant, sprinkle it with salt and set it aside for 30 minutes.
- Meanwhile, heat the 2 tablespoons of oil in a large, heavy skillet over medium-high heat. Add the mustard seeds and cumin seeds. When they start to smell aromatic and pop, about 1 to 2 minutes, add the onions. Saute until the onions are tender, about 5 minutes, then add the chili. Stir in the lamb. Continue to saute until the lamb has lost its red color and is finely broken up, about 3 to 4 minutes. Remove the skillet from the heat.
- Drain and rinse the eggplant. Pat the pieces dry on paper towels. Reheat the lamb mixture in the skillet, add 1 more tablespoon of the oil and add the eggplant. Cook, stirring, until the eggplant has lost its dryness, about 10 minutes. Stir in the tomatoes. Cover and simmer until the eggplant is tender, about 20 minutes.
- Season to taste with salt and cayenne pepper and set aside until ready to serve.
- Combine the ginger, coriander and yogurt and set aside.
- Heat the remaining oil in a wok or skillet. Add one of the pappadums. As soon as it begins to curl, about 15 to 20 seconds, turn it over using tongs or chopsticks. Flatten it in the pan and cook another few seconds. It should not darken. Drain on paper towels and repeat with the remaining pappadums.
- To assemble, reheat the eggplant and lamb mixture. Place a pappadum on each of 4 plates, top with a quarter of the lamb mixture, then cover with another pappadum. Spoon some of the yogurt mixture on top and serve with steamed rice, if desired.
ROASTED EGGPLANT AND ASPARAGUS SOUP RECIPE

- Heat the oven to 400 degrees. Rub the eggplant halves with the cut clove of garlic, 2 tablespoons of the olive oil, and salt and pepper to taste. Place in a baking dish and roast until the eggplant halves are browned and have softened, about 20 minutes. Meanwhile, cook the celery, onion, leeks, shallots and chopped garlic in a heavy pot with the remaining 2 tablespoons of olive oil over medium heat until translucent, 15 to 20 minutes. Add the white wine and cook until all the liquid has evaporated, about 10 minutes. Add the vegetable stock and continue to simmer. Peel the eggplant and add the flesh to the pot. EGGPLANT NAPOLEON

- Heat oven to 350 degrees. Place one eggplant on a baking sheet, and roast for one hour. Allow to cool. Slice in half lengthwise, and scoop pulp into a medium mixing bowl. Add olive oil to bowl, and blend well with a fork. Season to taste with salt and pepper, and reserve.
- Slice remaining eggplant into disks about 1/8 inch thick. Season to taste with salt and pepper. In a small bowl, beat eggs with a fork until blended. Dip each eggplant slice in the flour, egg and then the bread crumbs.
- In a medium saucepan, heat vegetable oil to 350 degrees. Add eggplant in small batches, and saute until brown on both sides, about a minute a side. Remove from pan, and drain on paper towels.
- To assemble, place a slice of eggplant on each of four plates, topped by a heaping tablespoon of reserved eggplant puree. Top with another slice of eggplant and another spoonful of puree, continuing until the eggplant and puree have been evenly distributed. Finish each napoleon with a slice of eggplant; there will be a total of four to six layers. Serve immediately.

- Preheat oven to 400F & cut eggplant + zucchini into lengthwise slices.
- Combine olive oil, thyme, organo + garlic & mix well. Lightly brush eggplant & zucchini slices w/oil mixture.

MINATURE NAPOLEONS WITH EGGPLANT CREME (VEGAN YUM YUM)
This is the cover recipe for Lauren Ulm's cookbook: Vegan Yum Yum. I think it is the best thing I've ever made! These make cute little starters. They are not finger food and they won't stand up well to being served that way in my opinion. So I suggest them as a starter where the food is plated and brought to the table. - Preheat oven to 300°F.
- Slice the tomatoes and zuchini into at least 12 slices (between 1/4 and 1/2 inch think). Place on a parchament-lined cookie sheet. Spay with oil to coat and sprinkle with dried herbs. Bake for 1 hour and 15 minutes.
- Add the mushoom caps to the roasted tomato/zucchini sheet. Spray with oil and put about a 1/2 teaspoon of tamari (or soy sauce) in each one. Bake for about 30 more minutes.
- While the vegetables are baking, peel and dice the eggplants (I had about 750 grams). Put a couple layers of paper towels in the bottom of a big bowl and microwave the eggplant in two batches for eight minutes each.
- Then saute the eggplants in olive oil for about 10 minutes until cooked an a littlebrown.
- Add eggplants, cashews, and garlic to a food processor and process until very smooth.
- To assemble, put a little dot of eggplant creme on the plate to act as an anchor. Place a tomato on top of the anchor and put more eggplant creme on top. Then add zucchini and more creme. Then add mushroom cap and a a dot of more creme.
- Garnish with basil and a bit tomato. Drizzle a little olive oil and some dots of vinegar on the plate to really be fancy.
- (I found that if the mushooms are big, they make a better base than topper.).

ASPARAGUS NAPOLEONS WITH ORIENTAL BLACK BEAN SAUCE

- Make the pastry rectangles:
- Roll out the pastry 1/8 inch thick on a lightly floured surface, cut out six 5- by 2-inch rectangles, and transfer them to a dampened baking sheet. Brush the tops of the rectangles with some of the egg wash, being careful not to let the egg wash drip down the sides, score them in a crosshatch pattern with the back of a paring knife, and brush them again with some to the remaining egg wash. Bake the rectangles in the upper third of a preheated 400°F. oven for 12 to 15 minutes, or until they are puffed and golden, transfer them with a spatula to racks, and let them cool. The pastry rectangles may be made 1 day in advance, kept in an airtight container at room temperature, and reheated. Halve the rectangles horizontally with a serrated knife and with a fork pull out carefully any uncooked dough.
- Make the sauce:
- In a small bowl dissolve the cornstarch in the water and stir in the broth, the soy sauce, the Scotch, and the sugar. In a heavy saucepan heat the oil over moderately high heat until it is hot but not smoking and in it stir-fry the beans, the zest, the gingerroot, and the garlic for 1 minute, or until the mixture is very fragrant. Stir the broth mixture and add it to the bean mixture. Bring the sauce to a boil, stirring, simmer it for 2 minutes, and keep it warm. The sauce may be made 1 day in advance, kept covered and chilled, and reheated.
- In a large deep skillet of boiling salted water cook the asparagus for 3 to 5 minutes, or until the stalks are just tender but not limp, and drain it well. Arrange the bottom half of each pastry rectangle on a plate and divide the asparagus among the pastries. Spoon the sauce over the asparagus and around the pastries on each plate and top the asparagus with the top halves of the pastries.
Tips:
- Choose fresh, tender vegetables. Look for eggplants that are firm and smooth, with no blemishes. Asparagus should be bright green and have tightly closed tips.
- Cook the vegetables properly. Eggplant should be cooked until it is tender but not mushy. Asparagus should be cooked until it is tender-crisp.
- Don't over-sauce the vegetables. A light coating of sauce is all that is needed.
- Assemble the Napoleons carefully. Make sure that the layers are even and that the vegetables are not overlapping too much.
- Serve the Napoleons immediately. They are best enjoyed warm.
