2-3 pounds chicken thighs
1 cup soy sauce ((aka shoyu))
1 cup sugar
1/2 cup water
1 tablespoon garlic ((crushed or minced))
2 teaspoons grated fresh ginger
red pepper flakes ((to taste))

Steps:

  • Combine soy sauce, sugar, water, garlic, ginger, and red pepper flakes in a high-sided saute pan over medium heat and stir until sugar is dissolved.
  • As soon as sugar is dissolved, place chicken in the pan. The chicken can be touching but don't over-crowd the pan.
  • Heat until the sauce comes to a boil and then reduce heat to a simmer.
  • Simmer uncovered for 35-40 minutes, turning the chicken over half-way through. The sauce should thicken and reduce as it is cooking.

I like to serve chow mein with shoyu chicken. If you're using your Instant Pot®, the chicken almost cooks itself while you prepare the chow mein.

Yield 8

Number Of Ingredients 20

1 cup low-sodium soy sauce
½ cup pineapple juice
2 tablespoons brown sugar
1 piece fresh ginger root, minced
2 cloves garlic, minced
2 pounds skinless, boneless chicken breasts, cut into pieces
2 tablespoons soy sauce
2 tablespoons hoisin sauce
2 tablespoons water
2 tablespoons oyster sauce
1 tablespoon rice vinegar
1 teaspoon brown sugar
1 tablespoon sesame oil
1 small onion, halved and thinly sliced into half rings
1 pound refrigerated chow mein noodles
1 ½ cups shredded cabbage
1 cup sliced celery
1 cup sliced mushrooms
½ cup diced carrots
¼ cup frozen peas

Steps:

  • Combine 1 cup soy sauce, pineapple juice, brown sugar, ginger, and garlic in a multi-functional pressure cooker (such as an Instant Pot®). Place chicken on top. Turn on Saute function and cook for about 8 minutes, stirring occasionally. Cancel saute function. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Meanwhile, combine 2 tablespoons soy sauce, hoisin sauce, water, oyster sauce, rice vinegar, and brown sugar in a bowl. Set sauce aside.
  • Heat sesame oil in a large skillet or wok over medium-high heat. Stir in onion and cook until soft and translucent, about 3 minutes. Stir in fresh chow mein noodles, cabbage, celery, mushrooms, carrots, and peas. Cook and stir until vegetables are tender, about 5 minutes. Mix sauce into the skillet and toss everything together until well combined and heated through, about 2 minutes. Serve with the shoyu chicken.

Tips:

  • To make the best Shoyu Chicken, it is important to use high-quality ingredients.
  • For the chicken, use boneless, skinless chicken thighs or breasts. These cuts of chicken are tender and flavorful.
  • For the marinade, use a combination of soy sauce, mirin, sake, and brown sugar. This marinade will add a delicious flavor to the chicken.
  • When cooking the chicken, be sure to cook it over medium heat. This will help to prevent the chicken from burning.
  • Cook the chicken until it is cooked through, but not overcooked. Overcooked chicken will be dry and tough.
  • If you are using a grill, be sure to grease the grates before cooking the chicken. This will help to prevent the chicken from sticking.
  • Serve the Shoyu Chicken with rice and your favorite vegetables.

Conclusion:

Eiko's Shoyu Chicken is a delicious and easy-to-make Japanese dish. The chicken is marinated in a flavorful sauce and then grilled or pan-fried. The result is a tender and juicy chicken that is perfect for a weeknight meal. With just a few simple ingredients, you can create a restaurant-quality dish that your family and friends will love.
