I remembered my mom and grandmother making pies of all sorts in the summer and fall seasons. Elderberry pies were one of grannie's favorite pies as well. So here is the simple recipe...

ELDERBERRY PIE FILLING

Elderberry pie filling image

My husband loves elderberry pie and every year he haunts the fields around our home for some of these luscious berries for his favorite pie. I do substitute splenda for sugar in this recipe.

Provided by dee vensel

Categories     Fruit Desserts

Time 55m

Number Of Ingredients 7

3 c elderberries
1 1/2 can(s) sugar
5 Tbsp flour
1/2 tsp cinnamon
3 Tbsp lemon
2 Tbsp butter
1/2 tsp salt

Steps:

  • 1. Make pie dough for double crust. jRemove stems from berries. Mis sugar, flour, salt and cinnamon, carefully blending with berries. Do not crush berries. Pour into pie crust. Pour lemon juice over berries. Put dots of butter on top and add top crust. Bake at 450 for 10 minutes then at 350 for 40 minutes.

Tips:

  • For the best flavor, use fresh elderberries. If you can't find fresh elderberries, you can use frozen or dried elderberries. However, fresh elderberries will give your pie the best flavor.
  • Be sure to wash the elderberries thoroughly before using them. Elderberries can be covered in a waxy coating that can make them difficult to digest. Washing the elderberries will remove this coating.
  • If you are using frozen elderberries, thaw them completely before using them. Frozen elderberries can be difficult to work with if they are not thawed.
  • If you are using dried elderberries, soak them in water for at least 30 minutes before using them. This will help to soften the elderberries and make them easier to work with.
  • Be sure to use a deep-dish pie plate when making elderberry pie. Elderberries can produce a lot of juice, so you need a deep pie plate to prevent the juice from spilling over.
  • Elderberry pie can be served warm or cold. If you serve it warm, top it with a scoop of vanilla ice cream or whipped cream.

Conclusion:

Elderberry pie is a delicious and easy-to-make dessert that is perfect for any occasion. The tartness of the elderberries is balanced by the sweetness of the sugar, and the flaky crust provides the perfect finishing touch. Whether you serve it warm or cold, elderberry pie is sure to be a hit with everyone who tries it.
