This is the best chicken I have ever made. My husband liked this so much that, because I had leftover potatoes, gravy, and cornbread stuffing, I had to make another chicken.

Tips:
- Use a whole chicken for the most flavorful results. A whole chicken will give you more meat and bones for a richer broth and tastier gravy.
- Season the chicken generously with salt and pepper. This will help to enhance the flavor of the chicken.
- Roast the chicken at a high temperature for a crispy skin and tender meat. A high temperature will help to brown the skin and seal in the juices, resulting in a crispy skin and tender meat.
- Roast the chicken for 1 hour per pound, or until the internal temperature reaches 165 degrees Fahrenheit. This will ensure that the chicken is cooked through.
- Let the chicken rest for 10 minutes before carving. This will allow the juices to redistribute throughout the chicken, resulting in a more tender and flavorful bird.
