1 (18.25 ounce) package white cake mix
1 (8 ounce) can crushed pineapple with juice
2 cups white sugar
1 (8 ounce) package cream cheese
½ cup butter, softened
4 cups confectioners' sugar
1 teaspoon vanilla extract
1 cup chopped pecans

Steps:

  • Prepare cake according to instructions on package. Bake in a 9x13 inch pan. Allow to cool.
  • Combine pineapple and sugar in saucepan. Bring to a boil. Spoon over cooled cake.
  • In a large bowl, cream butter and cream cheese until smooth. Add powdered sugar and beat until smooth. Add vanilla. Add pecans and mix well.
  • Spread cream cheese frosting over cake.

8 -10 medium potatoes, cut into bite sized chunks
1 (10 3/4 ounce) can cream of chicken soup
1 (8 ounce) carton sour cream
1 cup shredded cheddar cheese

Steps:

  • Peel and cut potaoes into bite sized chunks. Place in pan with water and boil until fork tender. Drain.
  • Spray a 8x11 baking dish with non stick cooking spray.
  • Add drained potatoes, Cream of Chicken Soup and Sour Cream. Mix well in baking dish. Stir in 1/2 cup shredded cheese. Top with remaining cheese.
  • Bake at 350 degrees for 25 - 30 minutes.
  • Note: I sometimes add cooked, crumbled bacon and or scallions to this dish.

Number Of Ingredients 9

4 medium sweet potatoes, peeled and cooked until tender
4 tablespoons unsalted butter, softened
1/2 cup brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla
2 eggs, beaten
12 ounces evaporated milk
1/2 cup pecans, chopped
1 -2 cup mini marshmallows

Steps:

  • cook sweet potatoes, peel and mash.
  • In a large mixing bowl, blend sweet potatoes, brown sugar, cinnamon, vanilla and a pinch of salt.
  • Stir in eggs and milk.
  • Pour into a square baking dish.
  • Bake at 375°F for 35 minutes.
  • Remove from oven.
  • Top with pecans and marshmallows and return to oven for 5 minutes or until marshmallows are puffed and browned.

Tips:

  • For a creamier casserole, use heavy cream instead of milk.
  • Add a crunchy topping by mixing together melted butter, brown sugar, and chopped pecans, then sprinkling it over the casserole before baking.
