ST. PATRICK'S DAY EMERALD EGGS

St. Patrick's Day Emerald Eggs image

I ran across these on the Food Network page looking for an appetizer for my St. Patrick's Day fun meal. I love looking for and preparing recipes for any occasion. I love Deviled Eggs and these were perfect for the "green" luck of the Irish.

Time 30m

Yield 12 Halves, 6 serving(s)

Number Of Ingredients 7

6 hard-boiled eggs
1 cup watercress, chopped
1/4 cup mayonnaise
2 tablespoons scallions, chopped
2 tablespoons tarragon, chopped
salt & pepper
4 -6 slices baked ham, thin sliced

Steps:

  • Once eggs are hard-boiled, cooled and pealed, cut in half & place yolk only in food processor. Add mayonnaise (you can use Miracle Whip if you prefer a zangier taste), watercress, scallions, & tarragon. Process until smooth and creamy. If you prefer a bit of a chunky texture, pulse until desired texture. Salt and pepper to taste.
  • Roll and place ham in each egg. I suggest placing a tad of yolk mixture in egg first (just a tad) to hold down the ham. Gently press in ham and fill with desired amount of yolk mixture.
  • Can be served immediately or chill for 1-2 hours before serving.

Categories     beverage

Time 1h25m

Yield about 1 1/2 quarts, 6 to 8 servings

Number Of Ingredients 9

8 large eggs, 2 separated*
3/4 cup sugar
1/8 teaspoon salt
2 1/2 cups heavy cream
2 cups whole milk
1 tablespoon pure vanilla extract
1/2 teaspoon freshly grated nutmeg, plus more for garnish
3/4 cup bourbon, optional
1/4 cup brandy, optional

Steps:

  • Combine the 6 whole eggs, 2 egg yolks, sugar, and salt in a medium mixing bowl and whisk together. Heat 2 cups heavy cream with the milk in a large saucepan over medium-low heat. When the cream and milk are hot, ladle about 1 cup into the egg mixture and whisk to incorporate. Pour the egg-milk mixture into the hot cream mixture, and continue to cook, stirring continuously, until the mixture thickens enough to coat the back of a spoon, 3 to 5 minutes. Remove the pan from the stove and strain the custard immediately through a fine-mesh sieve. Allow the custard to cool for 10 minutes before proceeding.
  • Add the vanilla, nutmeg, bourbon (if using), and brandy (if using) to the eggnog and stir well to incorporate. Beat the 2 egg whites to soft peaks in a clean mixing bowl and fold them into the custard base. In a separate bowl, beat the remaining 1/2 cup cream to soft peaks, and fold them into the eggnog as well. Cover and refrigerate until chilled, about 1 hour.
  • Pour into a decorative bowl or pitcher and garnish with nutmeg. Serve in small punch cups or old-fashioned glasses.

Time 35m

Yield 12 egg halves

Number Of Ingredients 11

2 teaspoons green food coloring
6 eggs, hard boiled, peeled, cut in half, cooled, and yolks mashed in a bowl
1/4 cup mayonnaise, plus
2 teaspoons mayonnaise (I use Cain's)
1 tablespoon yellow mustard, plus
1 teaspoon yellow mustard (I use French's)
1/4 cup cooked country ham, finely chopped (I use left over smoked shoulder)
black pepper, to taste
4 tablespoons green peppers, finely chopped (optional)
4 tablespoons carrots, finely chopped (optional)
onion, finely chopped, to taste (optional)

Steps:

  • Pour the green food coloring in a bowl and gently roll the egg white halves in it. Your fingers will turn very green unless you use surgical gloves.
  • Place the whites, hollow side down on a cake rack over a plate or tray to allow to drip-dry.
  • While whites dry, mix the thoroughly mashed yolks with mayonnaise, mustard, and finely chopped ham.
  • Season with pepper to taste. No salt is needed as ham is salty.
  • Add green pepper, carrots, or onion, if using, and mix well.
  • Before filling the whites, gently dab the green egg halves with paper towels to remove excess food coloring.
  • When filled place in egg tray or a dish, cover with saran wrap, and chill until serving time.

Tips:

  • Choose Fresh Eggs: For the best results, use fresh eggs that are free of cracks or blemishes.
  • Boil Eggs Properly: To prevent the eggs from cracking, bring them to room temperature before boiling. Place the eggs in a single layer in a saucepan and cover them with cold water. Bring the water to a boil, then reduce the heat to low and simmer for 10-12 minutes for hard-boiled eggs or 5-7 minutes for soft-boiled eggs.
  • Chill Eggs Thoroughly: After boiling, immediately transfer the eggs to an ice bath to stop the cooking process and prevent the yolks from turning green. Chill the eggs for at least 15 minutes before peeling and decorating.
  • Use Food Coloring Safely: If using food coloring, be sure to use a food-safe variety. Avoid using natural food colorings, such as beet juice or turmeric, as these can cause the eggs to turn a strange color.
  • Get Creative with Decorations: There are endless possibilities when it comes to decorating emerald eggs. Use your imagination and get creative! You can use edible glitter, sprinkles, food coloring, or even edible flowers to create unique and festive designs.

Conclusion:

Emerald eggs are a fun and easy way to add a touch of festive cheer to your Easter celebration. With a little creativity and some simple ingredients, you can create beautiful and unique eggs that will impress your family and friends. So gather your supplies and get started on your own batch of emerald eggs today!
