Enchilada Bubble Bake is a hearty and cheesy casserole that combines the flavors of enchiladas with the convenience of a bubble up bake. This simple dish is perfect for a weeknight meal or a potluck and can be easily customized to suit your family's preferences. The base of the bake is a layer of tortillas, which are topped with a mixture of cheese, meat, and sauce. The cheese can be a blend of Mexican cheeses, such as cheddar, Monterey Jack, and queso Oaxaca, or a single type of cheese. The meat can be ground beef, chicken, or pork, and the sauce can be a store-bought enchilada sauce or a homemade version. The bake is then topped with a layer of bubbly self-rising cornmeal batter, which bakes up light and fluffy.
