RICH CHICKEN STOCK

Rich Chicken Stock image

Provided by Bobby Flay

Time 4h40m

Yield about 6 cups

Number Of Ingredients 10

4 pounds chicken bones, chopped
3 large Spanish onions, quartered (skin left on)
1/2 head celery, coarsely chopped
2 large carrots, coarsely chopped
3 tablespoons olive oil
Salt and freshly ground black pepper
2 bay leaves
1/4 cup whole peppercorns
Small bunch flat-leaf parsley, stems only
6 sprigs fresh thyme

Steps:

  • Preheat oven to 450 degrees F.
  • Combine chicken bones, onions, celery, and carrots in a large roasting pan; toss with oil and season lightly with salt and pepper. Roast until the bones and vegetables are a rich golden brown, about 30 to 40 minutes.
  • Transfer the bones and vegetables to a large stockpot, add 12 cups cold water, and the remaining ingredients and bring to a boil over high heat. Reduce the heat to medium and simmer for 4 hours, skimming the scum that rises to the top with a ladle every 20 minutes. Remove from the heat and strain through a mesh strainer into a clean pot. Place back on the stove over high heat and cook until reduced by half. Use immediately or let cool to room temperature, cover, and refrigerate or freeze until ready to use.

CHICKEN BROTH

Chicken Broth image

Provided by Food Network Kitchen

Time 3h5m

Yield about 3 quarts

Number Of Ingredients 11

1 (4-pound) chicken, whole
1 medium onion, peeled and quartered
2 medium carrots, quartered,
2 stalks celery, quartered
1 leek, dark tops only
1 medium parsnip, peeled and quartered, optional
3 generous sprigs fresh thyme or 1 teaspoon dried
3 generous sprigs flat-leaf parsley
5 whole black peppercorns
1 bay leaf
About 4 quarts water

Steps:

  • Combine the chicken, vegetables, herbs, and peppercorns in a large stockpot. Pour in enough water to just cover the chicken completely. Heat the water to just under a boil over medium-high heat. Reduce the heat to a very low simmer, so that 1 or 2 bubbles break the surface of the broth about once a minute. Skim any fat and scum from the surface with a ladle, large spoon, or skimmer. (To prevent losing a lot of stock when skimming, put the skimmed liquid into a degreasing cup, and return any useable broth back to the pot.) Cook for about 1 hour or until the chicken is cooked through but not dry.
  • Remove the chicken from the pot, but continue to simmer the broth. Cool the chicken for about 10 minutes. Cut the chicken meat from the bone, and reserve for a chicken salad, soup, or other recipe. Return the bones to the pot and cook for 1 hour.
  • Strain into a non-reactive container, like another pot, a large bowl, or plastic quart or pint containers. Fill the sink with a mixture of ice and cold water so it comes about halfway up the sides of the container. Nestle the broth in the ice bath. (Stirring the broth speeds up the cooling process.) Cover and refrigerate or freeze the broth for future use. Broth can be stored in the refrigerator for up to 5 days. If the broth is unused after 5 days bring it to a boil before using.

Time 3h10m

Yield Makes 12 cups

Number Of Ingredients 10

1 whole chicken (3 1/2 pounds), gizzards removed
12 chicken feet, optional
1 large onion, quartered
1 carrot, cut into 2-inch pieces

1 bay leaf
6 sprigs flat-leaf parsley
1/2 teaspoon black peppercorns
1 piece ginger (3 inches long), thinly sliced
Kosher salt

Steps:

  • Place chicken and feet in a large pot. Add 4 quarts water (if chicken is not fully submerged, add more to cover). Boil, skimming foam from surface until it subsides, about 5 minutes. Add onion, carrot, celery, bay leaf, parsley, peppercorns, and ginger. Reduce heat to low and simmer until stock turns a rich golden color and vegetables are falling apart, 2 1/2 to 3 hours.
  • Strain broth (to avoid making it cloudy, do not press on solids); season with 1 tablespoon salt. Skim schmaltz (rendered fat) from surface with a spoon, or use a fat separator, or refrigerate broth and let fat solidify before removing; reserve schmaltz separately.

Tips:

  • Use high-quality ingredients. The better the quality of your ingredients, the better your broth will taste. Look for organic, free-range chicken and fresh, flavorful vegetables.
  • Roast your bones and vegetables. Roasting the bones and vegetables before simmering them adds a depth of flavor to the broth. It also helps to brown the bones, which releases gelatin, which gives the broth a rich, velvety texture.
  • Simmer your broth for a long time. The longer you simmer your broth, the more flavor it will develop. Aim for at least 8 hours, but you can simmer it for up to 24 hours.
  • Use a variety of vegetables. Don't be afraid to experiment with different vegetables in your broth. Some good options include carrots, celery, onions, leeks, garlic, parsnips, turnips, and fennel.
  • Season your broth to taste. Once your broth is finished simmering, season it to taste with salt, pepper, and any other herbs or spices you like.

Conclusion:

Enriched chicken broth is a delicious and nutritious way to add flavor to your favorite dishes. It's also a great way to use up leftover chicken bones and vegetables. With a little time and effort, you can easily make your own enriched chicken broth at home. So next time you're looking for a flavorful and healthy addition to your next meal, give enriched chicken broth a try.
