1 large Granny Smith Apple, peeled and diced
1 cup grated sharp cheddar cheese
1 teaspoon dried thyme
1 teaspoon garlic powder
12 toothpicks
1 teaspoon salt
1 teaspoon ground black pepper
1/4 cup flour
1/2 cup white wine
1/2 cup chicken broth
1 tablespoon dijon mustard
2 tablespoons canola oil
2 tablespoons butter

Steps:

  • With a paring knife, cut pockets into the chicken breasts, careful not to cut all the way through. Set aside.
  • In a large bowl combine the apples, cheese, thyme, and garlic powder.
  • Stuff each chicken breast with an equal portion of the apple mixture, securing with 1 or 2 toothpicks.

2 teaspoons Dijon mustard
1 teaspoon dry mustard
4 teaspoons honey
7 ounces olive oil
8 chicken breasts, boneless and skinless

3 medium Fuji apples
1 ounce unsalted butter
6 1/2 ounces fontina cheese, shredded
6 1/2 ounces dried bing cherries, roughly chopped

Steps:

  • For the marinade: Place the red wine vinegar, apple cider vinegar, the mustards, and honey in a food processor. Turn it on and drizzle in the olive oil until fully incorporated (emulsified). Marinate the chicken breasts overnight in this mixture.
  • Preheat grill or grill pan on high. Remove chicken breasts from the marinade and transfer to a plate. Season them with salt and pepper. At this point the breasts are ready to bake and can either be held in the refrigerator for up to 24 hours or baked right away. When ready to bake, place on a baking sheet and bake for about 12 to 15 minutes or until an instant-read thermometer registers 155 degrees F in the thickest part of the breast.

2 chicken breasts
1 medium size apple
1/2 of a medium size yellow onion
2 cloves fresh garlic (finely chopped)
1 slice of stale or baked multigrain bread diced (any type of bread will do)
1/4 cup of Italian Seasoning Breadcrumbs
A handful of sage and time finely chopped (preferably fresh)
1/4 cup of chicken broth (or water)
1/2 cup grated Manchego (or any other sharp cheese)
Pinch of salt and pepper to taste
Tablespoon of Olive Oil and butter
1/4 cup of white wine
1 baking sheet
Pinch of garlic and onion powder
A handful of toothpicks

Steps:

  • Preheat oven to 350 degrees Heat up oil and butter in a pan on medium heat. Finely chop the garlic, onion, and apple and add to the pan. Add a pinch of salt and pepper and sautee ingredients until they cook down enough for the moisture to come out. Finely chop the fresh sage and parsley and add. Chop up the slice of bread into small cubes and add to the mixture along with the breadcrumbs. Add the chicken broth to bind the ingredients. Then add the freshly grated cheese. Lastly, add the wine and allow for this to simmer for at least a minute. The end result will be a wet mixture - you should be able to bind it with your hand. Put this mixture into a bowl and set aside. Slice the chicken breast in half like a hot dog bun, making sure not to cut all the way through to other side. Season both sides of the chicken with salt, pepper, onion and garlic powder. Once the mixture is cool enough to handle, stuff it into the chicken breast and seal it with the toothpicks. Dust the chicken with a little flour and breadcrumbs and sear both sides until browned. Remove from heat and place the chicken onto an oiled baking sheet and bake it for about 10 minutes on each side or until browned. Keep the heat on the pan and add a splash of white wine and chicken broth to deglaze. This will create the gravy to go on top of the chicken. After the chicken has cooked for ten minutes, remove from the sheet and place it on a large piece of tinfoil on top of the baking sheet and seal the foil to contain more heat. Bake for another fifteen minutes or until the stuffing is steaming hot. Remove from heat and serve on a plate along with any vegetable or side-dish. Pour the gravy over the chicken and enjoy.

3 -5 sprigs thyme
1 (3 1/2-4 lb) broiler-fryer chickens, with giblets reserved for stock (recipe follows)
1/2 lemon, sliced (optional)
1/2 onion, sliced (optional)
4 tablespoons butter, softened (or margarine)
2 tablespoons butter (or margarine)
1 small onion, finely chopped
1 cooking apple, peeled, cored, and grated
1 cup fresh white breadcrumbs (or whole wheat, rye, etc.)
1 small egg, beaten
1 tablespoon chopped parsley
1 tablespoon chopped fresh thyme
1 grated lemon, zest of
salt and black pepper
2 teaspoons flour
1 1/4 cups giblet chicken stock or 1 1/4 cups vegetable stock

Steps:

  • Make the apple and herb stuffing: Melt the butter in a saucepan, add the onion, and cook gently for a few minutes, until softened.

Originally a recipe from Taste of Home's "Five Ingredient Cookbook," but I have done much tweaking to get it just right. This one is so yummy and filling, and the flavors blend surprisingly nicely. If you can find apple pie filling with cinnamon already added, you can just use that. Usually I can't find it at my store. Also I frequently cannot find 6 oz. packages of stuffing mix, so I just make about 2 cups of stuffing, or a whole box, and put the extra on the side. This recipe was originally for pork, so you can also substitute 6 boneless pork loin chops for the chicken. We are more chicken fans at my house! You can also leave the chicken breasts whole if you prefer. I just find it blends nicely with them chopped.
