CHEESY CAULIFLOWER CASSEROLE

This casserole has NO cream of anything kind of soup. It still is probably loaded with fat but could be lightened by using low-fat or no-fat products (I have not done this). I like it because it is quick and easy and only has 6 ingredients...plus my boys will eat it.

Tips:

  • To save time, use a pre-riced bag of cauliflower or grate it yourself in a food processor.
  • Be sure to squeeze out as much moisture from the cauliflower as possible before mixing it with the other ingredients. This will help prevent the casserole from becoming watery.
  • If you don't have heavy cream on hand, you can use milk or half-and-half instead. Just be aware that the casserole may not be as creamy.
  • Feel free to add other vegetables to the casserole, such as broccoli, zucchini, or bell peppers.
  • Top the casserole with shredded cheese and bread crumbs before baking. This will give it a golden brown crust.
  • Serve the casserole hot, with a side of your favorite salad or roasted vegetables.

Conclusion:

Cheesy cauliflower casserole is a delicious and easy-to-make dish that is perfect for a weeknight dinner. It's also a great way to get your kids to eat their vegetables. With its creamy sauce, tender cauliflower, and cheesy topping, this casserole is sure to be a hit with everyone at the table.
