1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
3 tablespoons instant espresso powder
1/4 teaspoon kosher salt
1 1/2 cups granulated sugar
1 1/2 sticks (12 tablespoons) butter, melted and cooled
1 tablespoon canola oil
2 large eggs
1 teaspoon vanilla extract
3/4 cup mini chocolate chips
4 ounces semisweet chocolate, finely chopped
1/4 cup plus 2 tablespoons heavy cream
2 tablespoons strong coffee
1 teaspoon flaky sea salt, optional

Steps:

  • Preheat the oven to 350 degrees F. Coat an 8-inch square baking pan with nonstick cooking spray. Cut a piece of parchment paper to fit the bottom of the pan with an overhang on two opposite sides.
  • For the brownies: Whisk together the flour, cocoa powder, espresso powder and salt in a small bowl and set aside. Whisk together the sugar, butter and oil in a large bowl. Add the eggs and vanilla and whisk just until combined. Using a spatula, stir the dry ingredients into the wet ingredients until no flour streaks remain and then fold in the chocolate chips. Pour the batter into the prepared baking pan and bake until the center is slightly set, 30 to 35 minutes. Let cool for about 30 minutes.
  • For the ganache: When the brownies are ready, put the chocolate in a small heatproof bowl and set aside. Heat the cream and coffee in a small saucepan just until it barely reaches a simmer. Pour the liquid over the chocolate and let sit for 10 seconds before whisking until smooth and shiny. Pour the ganache over the cooled brownies, gently shaking to completely coat the top. Let sit at room temperature until completely cool (about 1 hour) or pop into the refrigerator for 15 minutes before sprinkling with sea salt (if using). Run a knife around the edge of the baking pan and use the parchment to lift out the brownies before slicing.

Steps:

  • Preheat oven to 350 degrees F.

¾ cup chopped walnuts
¾ cup self-rising flour
¼ cup cocoa powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray an 8x8-inch baking dish with cooking spray. Line the pan with aluminum foil; spray foil with cooking spray.
  • Place walnuts on a baking sheet.

1 (8 ounce) package baker's unsweetened chocolate squares, chopped
2 tablespoons semi-sweet chocolate chips
1 1/4 cups real butter
3/4 cup starbucks espresso beans (ask them to grind for espresso)
3 1/2 cups granulated sugar
1/2 teaspoon salt
6 large eggs
2 tablespoons pure vanilla extract
1 1/2 cups flour
2 cups semi-sweet chocolate chips (or rest of bag remaining from 2T above)
1 cup whipping cream
1 tablespoon butter

Steps:

  • Preheat oven to 300 degrees.
  • Melt butter and stir in 2 T chocolate chips stirring until smooth.
  • In a large bowl combine sugar and espresso. Use a hand mixer on medium speed and add butter/chocolate mixture from #2 above. Now add salt, eggs and vanilla and blend well.
  • Reduce mixer speed and add flour. Blend to incorporate and then stir in the chopped 8oz of bakers chocolate.

1 cup dark brown sugar, firmly packed

1 tablespoon water, boiling
2 large eggs
1 teaspoon vanilla extract

1/3 cup butter, softened
1/2 cup almonds, sliced

Steps:

  • Preheat oven to 325°F.
  • Grease an 8x8-inch pan.
  • In medium bowl combine, flour and baking soda. Mix well with a wire whisk and set aside.
  • In a large bowl blend sugars with an electric mixer on medium.
  • Add butter and mix to form a grainy paste.

1 cup sifted cake & pastry flour (measure after sifting)
1-1/2 tsp baking powder
Pinch of salt
1 300g package Chipits milk chocolate chips
Icing:
1 cup soft unsalted butter
1 cup icing sugar
1 cup unsweetened cocoa powder (Hershey's is fine)
2-4 Tb. Medaglia d'Oro instant espresso powder
Splash of Tia Maria or Kahlua (optional)
Pinch of salt

Steps:

  • Brownies: Preheat oven to 350F. Generously butter a 9 X 13 pan and line with parchment paper, with enough at ends or sides so that you can lift out the brownies when they are baked. Melt butter in large heatproof mixing bowl over hot water. Add sugars, cocoa and espresso powder and stir until sugars start to dissolve. Cool to body temperature so eggs don't cook. Using stand or hand mixer, beat in eggs, one at a time. Add flour and baking powder and mix just until blended. Stir in chocolate chips. Spread in prepared pan. Bake at 350F for 20-23 minutes -- sides will be set and centre will be very soft but not liquid. Let cool in pan, then remove from pan and cool completely before icing. 1 c butter, unsalted
3 oz best-quality semi-sweet chocolate, finely chopped
2 shots espresso vodka
1 c sugar
1/2 c cocoa powder
1/2 c mascarpone cheese
3 large eggs, room temperature
1/2 c all purpose flour
1/4 tsp kosher salt
GANACHE
6 oz best-quality semi-sweet chocolate finely chopped
6 Tbsp whipping cream
3 Tbsp butter, unsalted
1 shot espresso vodka

Steps:

  • 1. Preheat oven to 325°F. Butter an 8-inch square pyrex pan. Place chopped chocolate in a mixing bowl; set aside.
  • 2. In a small glass bowl, melt butter in microwave (take it out before it starts bubbling.) Pour butter over the chocolate and let stand for 30 seconds. Stir until chocolate is completely melted. Sift in sugar and cocoa powder.
  • 3. With a wooden spoon, beat in mascarpone, eggs and vanilla, Espresso vodka and mixing until smooth. Gently fold in flour and salt. Pour batter into prepared pan and spread evenly. Place into preheated oven and bake 45 to 50 minutes, or until a tester comes out clean.
  • 4. Place pan on cooling rack and let brownies cool 10 to 15 minutes while you make the ganache.
  • 5. Place chopped chocolate in a mixing bowl. In a small saucepan, bring the cream and butter to just below boiling point, over medium heat. Pour this hot mixture over the chocolate with the espresso vodka and let stand for 30 seconds, then stir until smooth. Pour ganache over brownies while still warm, and spread to cover evenly.
  • 6. Let ganache firm up before cutting. It's best to refrigerate them until quite firm. Once the ganache is firm and the brownies have been cut, they do not need to be kept in the refrigerator.

14 oz semisweet choc chips
1 C sugar
1/2 C butter
1/4 C light corn syrup
1/4 C brewed espresso or dark roast coffee
3 large eggs
1 Tbsp
vanilla
1 C coarsely chopped walnuts
6 oz. swiss dark chocolate chopped coarsely

Steps:

  • 1) Coat 13x9 in baking pan with cooking spray. Line with aluminum foil allowing ends to hang over short sides of pan. Tuck overlapping edges under rim on short sides. Coat foil with cooking spray. 2) Combine flour and next 3 ingredients in a small bowl. Place semisweet choc chips in large bowl. 3) Combine sugar and next 3 ingredients in a saucepan. Cook over medium heat, stirring constantly until sugar and butter melt and mixture comes to a rolling boil. Remove from heat and pour over chocolate in bowl. Let stand 2 mins. Do not stir. 4) Beat chocolate mixture at low speed with electric mixer until chocolate melts and mixture is smooth. Add eggs, 1 at a time, beating well after each addition. Add flour mixture, beat at medium speed until well blended. Stir in vanilla, walnuts and dark chocolate. Spoon batter into prepped pan spreading evenly. 5) Bake at 325 F for 38-40 mins. Cool Completely in pan on a wire rack. Cover and chill at least 2 hours. 6) Carefully invert brownies from pan, using overlapping foil as handles, remove foil. Invert brownies again onto a cutting board. Cut into squares or circles. Scraps can be used as toppings for ice-cream.

BROWNIES
1 pkg fudge brownie mix
1/2 c water
1/4 c oil
1 egg
2 tsp instant espresso coffee granules
1 tsp vanilla extract
FILLING
1/4 c butter or margarine, softened
1/2 c brown sugar, firmly packed
1 egg
2 tsp instant espresso coffee granules
1 Tbsp vanilla extract
1 c coarsely chopped walnuts
3 bars sweet dark or bittersweet chocolate,coarsely chopped
GLAZE
1/2 c semi-sweet chocolate chips
1 Tbsp butter or margarine
1/8 tsp instant espresso coffee granules
1 to 2 tsp milk or whipping cream

Steps:

  • 1. Heat oven to 350. Grease bottom only of 13x9 inch pan. In large bowl, combine all brownie ingredients. Beat 50 strokes by hand. Spread in greased pan. Bake at 350 for 30 minutes. Remove from oven.
  • 2. Meanwhile, in small bowl, beat 1/4 cup butter and brown sugar until light and fluffy. Add 1 egg, 2 tsp coffee granules and 1 tsp vanilla; blend well. In medium bowl, combine walnuts and chopped chocolate. Add brown sugar mixture; blend well. Spoon and carefully spread over partially baked brownies. Bake at 350 for an additional 17 to 20 minutes or until lightly brown.
  • 3. In small saucepan over low heat, melt chocolate chips and 1 tbsp butter, stirring constantly until smooth. Remove from heat. With wire whisk, stir in 1/8 tsp coffee granules and enough milk for desired drizzling consistency. Drizzle over warm brownies. Cool completely. Cut into bars.

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom of 8 or 9-inch square pan with shortening or cooking spray.
  • Make brownie batter as directed on box. Stir in espresso coffee, walnuts and 1/3 cup of the chocolate chips. Spread in pan. Sprinkle with remaining 1/3 cup chocolate chips and the espresso beans.
