¼ cup butter, softened
4 cloves garlic, chopped
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh rosemary
1 lemon, zested and halved
1 teaspoon salt, divided
1 teaspoon ground black pepper, divided
1 whole chicken
1 tablespoon olive oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix butter, garlic, thyme, rosemary, lemon zest, 1/2 teaspoon salt, and 1/2 teaspoon pepper together in a bowl.

One 3 1/2-pound roasting chicken, giblets removed, refrigerated
4 tablespoons unsalted butter, melted
1 teaspoon sesame oil
1 tablespoon salt, plus more for sprinkling
2 teaspoons freshly ground black pepper, plus more for sprinkling
4 flatbreads or pita breads, warm, for serving

Steps:

  • Preheat the oven to 425 degrees F. Take the chicken out of the fridge and bring to room temperature to ensure even cooking, about 30 minutes.
  • Combine the butter and oil in a small bowl.
  • Rinse the chicken inside and out. Remove any excess fat and leftover pinfeathers from the chicken and pat the outside dry. Liberally sprinkle the inside of the chicken with the salt and pepper. 1/4 cup Kikkoman soy sauce
3 tablespoons Burgundy wine
3 tablespoons olive oil

  • Make marinade:
  • In a large bowl stir together marinade ingredients.
